Steak Burger

Cine spune ca un burger poate sa aiba la baza doar o chiftea? Ei bine, nu e chiar asa. Va propun sa incercati un burger cu steak de vita, sos delicios 100% homemade, inele de ceapa crocante, chifla mega-pufoasa si cartofi cu parmezan si usturoi.

INGREDIENTE / INGREDIENTS:

(pentru 4 portii / for 4 servings)

  • 4 felii muschi de vita / 4 slices beef tenderloin
  • 4 chifle / 4 buns
  • Valeriana / Valerian
  • Sare / Salt

Pentru sos:

  • 100 ml ulei / 100 ml oil
  • 1 ou / 1 egg
  • 1 lingura ketchup / 1 teaspoon ketchup
  • Sare / Salt
  • 1 ceapa rosie mica / 1 small red onion
  • 1 castravete murat / 1 pickles

Pentru inelele de ceapa:

  • 2 cepe albe / 2 white onions
  • 2 linguri faina / 2 tablespoons flour
  • 2 linguri malai / 2 tablespoons maize flour
  • 1 lingura mac / 1 tablespoon poppy seed
  • 1/2 lingurita boia / 1/2 teaspoon paprika
  • Sare / Salt
  • 1 lingura iaurt / 1 tablespoon yogurt
  • 50 ml apa / 50 ml water

Pentru garnitura:

  • 1 kg cartofi / 1 kg potatoes
  • 1 lingura ulei de masline / 1 teaspoon olive oil
  • Sare / Salt
  • 25 grame parmezan / 25 grams parmesan
  • 2 catei de usturoi / 2 garlic cloves
  • Patrunjel / Parsley
  • 30 ml apa / 30 ml water

Presaram carnea cu sare si o lasam pe un fund de lemn timp de 2 ore.

Pentru chifle, gasiti aici cea mai buna reteta.

Taiem ceapa alba rondele mai groase si o desfacem sub forma de inele. Amestecam inelele cu 1 lingura de iaurt dizolvata in 50 ml apa. Lasam la macerat in frigider o ora. Separat amestecam faina, malaiul, sarea, boia si semintele de mac. Trecem inelele de ceapa prin acest amestec si le prajim in baie de ulei timp de 2 minute pana cand sunt frumos rumenite. Le scoatem pe servetele absorbante pentru a indeparta excesul de ulei.

Pentru sos, punem in paharul blenderului, uleiul, ketchup-ul, sarea si oul intreg (cu mare grija sa nu il spargem). Plasam mixerul vertical in pahar astfel incat sa prindem galbenusul in cupa blender-ului. Incepem sa mixam, pastrand blenderul in aceeasi pozitie. Cand incepe sa se ingroase amestecul, ridicam usor blenderul cu miscari sus – jos pana cand obtinem o compozitie de consistenta maionezei. Adaugam ceapa rosie si castravetele murat taiate marunt. Lasam la rece pana servim.

Eu am pregatit cartofii la Actifry cu o lingura de ulei. Cand au fost gata, i-am amestecat cu parmezan ras fin, patrunjel taiat marunt si mujdei de usturoi cu apa.

Pentru steak, am incins bine grill-ul si am pregatit carnea cate 3 minute pe fiecare parte. Cand friptura este gata o scoatem pe un platou si o acoperim cu o folie de aluminiu. Lasam 15 minute, apoi stergem carnea cu un servet absorbant si o taiem fasii subtiri.

Taiem chiflele in doua si distribuim sosul, valeriana, felii de steak si inelele de ceapa. Servim cu cartofi cu parmezan si extra sos.

Who says a burger can only be based on a meatball? Well, it’s not like that. I suggest you try a burger with steak, delicious 100% homemade sauce, crispy onion rings, mega fluffy bun and potatoes with parmesan and garlic.

Sprinkle the meat with salt and leave it on a wooden bottom for 2 hours.

Cut the white onion into thicker slices and unwrap it in the form of rings. Mix the rings with 1 tablespoon of yogurt dissolved in 50 ml of water. Let it soak in the fridge for an hour. Separately mix flour, maize flour, salt, paprika and poppy seeds. Pass the onion rings through this mixture and fry them in an oil bath for 2 minutes until they are nicely browned. Remove them on absorbent napkins to remove excess oil.

For the sauce, put in the glass of the blender, the oil, the ketchup, the salt and the whole egg (be very careful not to break it). Place the vertical mixer in the glass so that we catch the yolk in the blender cup. Start mixing, keeping the blender in the same position. When the mixture starts to thicken, gently lift the blender up and down until you get a composition of mayonnaise consistency. Add red onions and finely chopped pickles. Let cool until served.

I prepared the potatoes at Actifry with a tablespoon of oil. When they were ready, I mixed them with finely grated Parmesan cheese, finely chopped parsley and garlic sauce with water.

For the steak, heat the grill well and cooked the meat for 3 minutes on each side. When the steak is ready, take it out on a plate and cover it with aluminum foil. Leave for 15 minutes, then wipe the meat with an absorbent napkin and cut it into thin strips.

Cut the buns in half and distribute the sauce, valerian, steak slices and onion rings. Serve with potatoes with parmesan and extra sauce.
