Ciuperci cu maioneza si usturoi este unul dintre aperitivele clasice care nu lipseste de pe nicio masa de sarbatoare. Este atat de cunoscuta si prezenta pe mesele noastre incat vom sti cu certitudine ca va fi primul castron golit de pe masa. Pentru un gust desavarsit, mie imi place sa folosesc ciuperci proaspete in detrimentul celor conservate.

INGREDIENTE / INGREDIENTS
(pentru 8 portii / for 8 servings)
- 500 grame ciuperci proaspete / 500 grams mushroom
- 1 lingurita ulei de masline / 1 teaspoon olive oil
- 2 galbenusuri de ou fierte / 2 boiled egg yolks
- 1 lingura mustar / 1 tablespoon mustard
- 50 ml ulei / 50 ml oil
- 2 linguri smantana / 2 tablespoons sour cream
- Sare / Salt
- 1 catel de usturoi / 1 garlic clove

Metoda de preparare este extrem de simpla. Spalam ciupercile si le taiem felii subtiri. Intr-o tigaie incingem o lingurita de ulei de masline si adaugam ciupercile. Le gatim la foc mare pana cand apa lasata de ciuperci scade integral. La sfarsit adaugam sare si lasam sa se raceasca foarte bine.
Pentru sos eu am ales sa pregatesc o maioneza din galbenusuri fierte. Sfaramam galbenusurile cu ajutorul unei furculite in bolul mixerului. Adaugam sarea, o lingura de apa rece si incepem sa mixam. Adaugam mustarul si treptat uleiul, mixand in continuu. La sfarsit adaugam smantana si usturoiul strivit si mai mixam cateva secunde.

Adaugam ciupercile reci in sosul de maioneza si servim salata in bol sau pe felii de paine de prajita.

Mushrooms with garlic mayonnaise
Mushrooms with garlic mayonnaise is one of the classic appetizers that cannot be missing from any holiday table. It is so well known and present on our tables that we will know for sure that it will be the first bowl emptied from the table. For a perfect taste, I like to use fresh mushrooms instead of canned ones.
The preparation method is extremely simple. Wash the mushrooms and cut them into thin slices. Heat 1 teaspoon of olive oil in a pan and add the mushrooms. Cook them over high heat until the water left by the mushrooms drops completely. At the end, add salt and let it cool down very well.
For the sauce, I chose to prepare a mayonnaise made from boiled egg yolks. Crush the yolks with a fork in the bowl of the mixer. Add salt, a spoonful of cold water and start mixing. Add the mustard and gradually the oil, mixing continuously. At the end, add the cream and crushed garlic and mix for a few more seconds.
Add the cold mushrooms to the mayonnaise sauce and serve the salad in a bowl or on slices of toasted bread.
