Cred ca aceasta este una dintre cele mai bune retete de spaghete cu vongole pregatita acasa. Cu paste si vongole proaspete, usturoi, ulei de masline si patrunjel verde, aceste delicii italiene cu scoici au ajuns intr-un timp foarte scurt preferatele mele. Extrem de rapid de executat, secretul acestor paste consta in prospetimea si calitatea ingredientelor folosite si cateva ponturi autentice primite de la Chef Pippo.

Spaghetti alle Vongole

INGREDIENTE / INGREDIENTS

(pentru 2 portii / for 2 servings)

Pentru pastele cu vongole / For clams pasta

  • 250 grame spaghette proaspete / 250 grams fresh spaghetti
  • 1 kg vongole / 1 kg clams
  • 4 catei de usturoi / 4 garlic cloves
  • 200 ml supa de creveti / 200 ml shrimps stock
  • 2 linguri de patrunjel verde / 2 tabelspoons parsley
  • 3 linguri ulei de masline / 3 tablespoons olive oil
  • Sare / Salt

Pentru supa de creveti / For the shrimps stock

  • 200 grame cochilii si capete creveti / 200 grams shrimps shells and heads
  • Praz (3 cm) / Leek (3 cm)
  • 25 grame ulei de masline / 200 grams olive oil
  • 800 grame apa / 800 grams water
  • 1 lingura sare / 1 tablespoon salt

Pentru pregatirea supei, alegem creveti proaspeti pe care ii decorticam. Pastram crevetii pentru a-i folosi in alte retete. Punem intr-o oala mica cochiile si capetele crevetilor, prazul taiat marunt si uleiul de masline. Sotam la foc mic pentru 3 minute apoi adaugam apa si sarea. Fierbem timp de 8 minute, apoi strecuram supa. Pentru aceasta reteta vom folosi doar 200 ml de supa, insa putem pastra restul supei in pungi la congelator.

Pentru a pregati vongolele, primul pas este sa aruncam vongolele care au carapacea deschisa. Rasturnam vongolele intr-un bol adanc in care am pregatit o solutie salina (apa si cateva linguri de sare). Lasam scoicile in acest amestec timp de 2 ore, apoi le curatam cu ajutorul unei perii, indepartand eventuale fire de nisip.

Intre timp fierbem spaghetele conform indicatiilor de pe ambalaj.

Intr-o tigaie incingem uleiul de masline si adaugam scoicile si usturoiul. Turnam deasupra supa de creveti si acoperim cu capac. Agitam tigaia si o lasam sa fiarba 3 – 4 minute pana cand se deschid scoicile. Indepartam capacul si adaugam spaghetele scurse de apa. Amestecam usor cu varful unei pensete si mai adaugam o lingurita de usturoi zdrobit si patrunjelul verde.

Spaghetti alle Vongole

I think this is one of the best homemade spaghetti with clams recipes. With fresh pasta and clams, garlic, olive oil and fresh parsley, this Italian pasta with clams has become my favorite in a very short time. Extremely quick to execute, the secret of these pastas lies in the freshness and quality of the ingredients used and some tips received from Chef Pippo.

To prepare the soup, choose fresh shrimps. Unpeel them and keep the shrimp separately to use in other recipes. Put the shrimp shells and heads, finely chopped leeks and olive oil in a small pot. Sauté on low heat for 3 minutes, then add water and salt. Boil for 8 minutes, then strain the soup. For this recipe we will use only 200 ml of soup, but we can keep the rest of the soup in bags in the freezer.

To prepare the clams, the first step is to discard the clams that have their shells open. To clean them, turn the clams into a deep bowl in which you have prepared a saline solution (water and a few spoons of salt). Leave the clams in this mixture for 2 hours, then clean them with a brush, removing any sand.

Meanwhile, cook the spaghetti according to the instructions on the package.

Heat the olive oil in a pan and add the clams and garlic. Pour the shrimp soup on top and cover with a lid. Shake the pan and let it boil for 3-4 minutes until the clams open. Remove the lid and add the drained spaghetti. Mix gently with the tip of a pair of tweezers and add 1 teaspoon of crushed garlic and green parsley.

Serve the spaghetti with clams with great appetite with a glass of white wine.
