O reteta ieftina, incredibil de gustoasa, care combina textura aceea lipicioasa si frageda a picioruselor cu un mujdei puternic, parfumat, totul asezat langa o mamaliga fierbinte care le imbina perfect. Este o mancare care are poveste, emotie si traditie. Cand eram copil, momentele acelea in care stateam langa mama in timp ce fierbea piftiile de porc erau de neuitat. Piciorusele nu lipseau niciodata. Se fierbeau ore intregi, pana cand carnea se desprindea singura de pe os si umpleau casa cu un miros inconfundabil. Eram lipita de ea cand le curata, mereu „gustam” in avans si aveam senzatia ca particip la o ceremonie culinara. Astazi, le pregatim ceva mai rapid, dar gustul ramane acelasi – autentic, romanesc si plin de amintiri.

INGREDIENTE (pentru 2 portii)
• 2 picioruse de porc
• 1 lingura sare
• 4 catei usturoi

Incepem prin a taia piciorusele de porc in trei bucati egale sau, si mai simplu, rugam macelarul sa faca asta pentru noi. Sunt destul de tari, asa ca nu merita sa ne luptam cu ele acasa. Presaram cu sare si le punem la fiert intr-o oala incapatoare cu apa si o lingura de sare.

Eu am ales din nou Tefal One Pot pentru ca este mult mai rapid si pastreaza perfect gustul preparatelor. Selectam functia de fiert sub presiune pentru 35 de minute, apoi depresurizam oala si scoatem piciorusele in tava termorezistenta. Adaugam putina apa din zeama in care au fiert, cat sa le mentina suculente.

Le introducem in cuptorul preincalzit la 200°C cu functia grill pornita, pana cand devin frumos rumenite, cu margini aurii si crocante exact atat cat trebuie. Le scoatem fierbinti si le stropim cu mujdei generos, proaspat zdrobit, parfumat si usor iute.
Servim imediat, cu mamaliga aburinda care strange toate aromele in cea mai simpla si perfecta combinatie posibila.

Oven-baked pork trotters with garlic sauce and polenta – that simple, honest Romanian flavor that’s absolutely unbeatable! Known affectionately as “pig sneakers,” these trotters are the kind of dish that surprises you with their simplicity and the rich, deep aroma that takes you straight back to your grandmother’s kitchen. It’s an inexpensive recipe, incredibly tasty, combining the sticky-tender texture of the trotters with a bold, fragrant garlic sauce, all served next to steaming hot polenta that brings everything together perfectly. This is the kind of food that carries story, emotion and tradition. As a child, I used to stand next to my mother while she simmered pork trotters for piftie (aspic), and these cuts were always present. They simmered for hours, until the meat practically fell off the bone, filling the entire house with an unmistakable smell. I was glued to her side when she cleaned the meat, always “tasting” ahead of time, feeling like I was part of a culinary ritual. Today, we prepare them a bit faster, but the taste remains the same — authentic, Romanian, and full of memories.
INGREDIENTS (serves 2)
• 2 pork trotters
• 1 tablespoon salt
• 4 garlic cloves
Start by cutting the pork trotters into three equal pieces — or even better, ask your butcher to do it, because they are quite tough and hard to cut at home. Sprinkle them with salt and place them in a large pot with water and a tablespoon of salt.
I used the Tefal One Pot again because it’s much faster and keeps the flavor intact. Select the pressure-cooking function for 35 minutes, then release the pressure and transfer the trotters to an oven-safe dish. Add a bit of the cooking liquid to keep them juicy.
Place the dish in a preheated oven at 200°C (392°F), using the grill function, and bake until nicely browned, with golden, slightly crispy edges. Remove them hot and drizzle generously with freshly crushed, fragrant, slightly spicy garlic sauce.
Serve immediately, with steaming polenta — the simplest and most perfect way to tie all the flavors together.
