Saltimbocca a la romana este reteta care te va cuceri instant. Inspirata din celebra Saltimbocca italiana, varianta noastra romaneasca pastreaza eleganta retetei originale, dar aduce o nota mai familiara, mai cozy si mai potrivita pentru mesele de zi cu zi. Piept de pui fraged, prosciutto delicat, cascaval topit si salvie parfumata – toate acestea se strang intr-un rulou suculent, care se rumeneste perfect in tigaie si capata apoi aroma bogata a sosului din supa de pui, vin alb si unt topit. Este genul de preparat pe cat de simplu, pe atat de surprinzator: gata in mai putin de 30 de minute, dar cu gust de restaurant.

INGREDIENTE (pentru 3 portii)


• 6 felii de piept de pui
• 6 frunze de salvie
• 6 felii de prosciutto crudo
• 120 g provolone sau alt cascaval
• sare
• 2 linguri ulei de masline
• 100 g supa de pui
• 50 ml vin alb
• 50 g unt

Santilboca a la romana

Batem usor feliile de piept de pui, doar cat sa le subtiem, fara a le rupe. Le presaram cu putina sare.


Asezam pe fiecare felie de pui cate o felie de prosciutto si un cubulet de cascaval. Rulam strans si asezam o frunza de salvie deasupra. Fixam ruloul cu 2 scobitori, astfel incat sa isi pastreze forma frumoasa la gatit.

Incalzim o tigaie incapatoare si adaugam uleiul de masline. Prajim rulourile la foc mediu cate 2 minute pe fiecare parte, pana cand prind o crusta aurie.


Adaugam in tigaie supa de pui, vinul alb si untul. Lasam 2–3 minute la foc mediu, pana cand untul se topeste si se formeaza un sos lucios si parfumat.


Transferam tigaia in cuptorul preincalzit la 180°C si gatim rulourile 15 minute, pana cand devin perfect fragede si rumenite.

Servim Saltimbocca fierbinte, cu piure de mazare, piure de cartofi sau cu o salata verde simpla. Sosul aromat din tigaie se toarna obligatoriu peste rulouri – este partea care face reteta memorabila.

O reteta eleganta, simpla si incredibil de gustoasa – perfecta pentru atunci cand vrei sa gatesti ceva special fara batai de cap.

Saltimbocca a la Romana – tender, flavorful, absolutely irresistible chicken rolls! Inspired by the famous Italian Saltimbocca, our Romanian version keeps the elegance of the original while adding a familiar, cozy touch — perfect for everyday meals. Tender chicken breast, delicate prosciutto, melted cheese and fragrant sage — all wrapped into a juicy roll, seared to perfection in the pan and then infused with the rich flavors of chicken broth, white wine and melted butter. It’s one of those dishes that’s as simple as it is surprising: ready in under 30 minutes, but with a restaurant-style taste.

INGREDIENTS (serves 3)

• 6 slices chicken breast
• 6 sage leaves
• 6 slices prosciutto crudo
• 120 g provolone (or any melting cheese)
• salt
• 2 tbsp olive oil
• 100 g chicken broth
• 50 ml white wine
• 50 g butter

Lightly pound the chicken breast slices just enough to thin them without tearing. Sprinkle a bit of salt over each piece.

Place a slice of prosciutto and a small piece of cheese on each chicken slice. Roll tightly and place one sage leaf on top. Secure each roll with 2 toothpicks so they keep their shape during cooking.

Heat a large pan and add the olive oil. Sear the chicken rolls over medium heat for about 2 minutes on each side, until they form a golden crust.

Add the chicken broth, white wine, and butter to the pan. Let it cook for 2–3 minutes over medium heat until the butter melts and a glossy, fragrant sauce forms.

Transfer the pan to a preheated oven at 180°C (350°F) and bake the rolls for 15 minutes, until they are perfectly tender and beautifully browned.

Serve the Saltimbocca hot, with pea purée, mashed potatoes, or a simple green salad. And don’t skip the sauce — pour it generously over the rolls; it’s what makes the recipe truly unforgettable.
