Vinete Sichuan – reteta asiatica intensa, dulce-picanta si absolut irezistibila! Vinetele au darul de a absorbi aromele ca un burete, iar atunci cand sunt gatite corect, pot deveni vedeta absoluta a mesei. Vinetele Sichuan sunt dovada perfecta. Inspirata din bucataria chinezeasca, aceasta reteta aduce pe masa un amestec spectaculos de gusturi: dulce, sarat, acrisor si usor iute, toate legate intr-un sos lucios si parfumat. Este genul de preparat care te cucereste de la prima imbucatura. Vinetele devin fragede, usor caramelizate, iar sosul bogat, cu note de susan, ghimbir si usturoi, transforma totul intr-o experienta autentica asiatica, dar usor de pregatit acasa. Poate fi servita ca fel principal vegetarian sau ca garnitura langa orez basmati simplu, care echilibreaza perfect intensitatea aromelor.

INGREDIENTE (pentru 2 portii)
- 500 grame vinete
- 20 grame sos de soia
- 20 grame zahar brun
- 30 mililitri vin de otet
- 15 mililitri otet de orez
- 15 mililitri ulei de susan
- 1 lingura pasta de ardei
- 1/2 lingurita amestec de condimente chinezesti
- 15 grame ghimbir proaspat
- 2 catei de usturoi
- 1 lingura amidon
- sare
- seminte de susan, ceapa verde, ardei iute

Incepem prin a pregati vinetele. Le taiem in fasii lungi de aproximativ 7 – 8 centimetri si late de un 1,5 cm. Le punem intr-un bol cu apa rece si o lingurita de sare si le lasam la inmuiat timp de treizeci de minute. Acest pas ajuta la eliminarea gustului amar si la obtinerea unei texturi mai placute dupa gatire.
Intre timp, pregatim sosul. Intr-un blender punem sosul de soia, zaharul brun, vinul de otet, otetul de orez, uleiul de susan, pasta de ardei, amestecul de condimente chinezesti, ghimbirul tocat marunt si usturoiul. Mixam pana obtinem un sos omogen, intens aromat. Transferam sosul intr-o craticioara si il fierbem la foc mic timp de aproximativ zece minute, pana cand se leaga usor si aromele se imbina.

Scurgem vinetele din apa si le stergem foarte bine cu un prosop absorbant. Le punem intr-un bol si le presaram uniform cu amidon, amestecand usor pentru a le acoperi.
Incalzim o tigaie incapatoare si adaugam o lingura de ulei de susan. Prajim vinetele la foc mediu timp de aproximativ 15 minute, amestecand ocazional, pana cand devin aurii si moi. Adaugam sosul pregatit si mai gatim doua-trei minute, pana cand vinetele sunt bine imbracate in sos si usor caramelizate.

La final, presaram seminte de susan, ceapa verde tocata si, daca ne place mai picant, cateva felii de ardei iute.
Vinetele Sichuan se servesc imediat, fierbinti, alaturi de o portie simpla de orez basmati, care echilibreaza perfect sosul intens. Sunt delicioase ca fel principal vegetarian, dar functioneaza excelent si ca garnitura langa preparate asiatice cu carne sau tofu.

Sichuan Eggplant
Sichuan Eggplant – an intense Asian recipe, sweet and spicy and absolutely irresistible! Eggplants have the ability to absorb flavors like a sponge, and when cooked properly, they can become the absolute star of the table. Sichuan Eggplant is the perfect proof. Inspired by Chinese cuisine, this recipe brings to the plate a spectacular mix of flavors: sweet, salty, tangy and lightly spicy, all brought together in a glossy, aromatic sauce. It is the kind of dish that wins you over from the very first bite. The eggplant becomes tender and lightly caramelized, while the rich sauce, with notes of sesame, ginger and garlic, turns everything into an authentic Asian experience that is still easy to prepare at home. It can be served as a vegetarian main dish or as a side alongside simple basmati rice, which perfectly balances the intensity of the flavors.
INGREDIENTS (for 2 servings)
- 500 grams eggplant
- 20 grams soy sauce
- 20 grams brown sugar
- 30 milliliters rice wine vinegar
- 15 milliliters rice vinegar
- 15 milliliters sesame oil
- 1 tablespoon chili paste
- 1/2 teaspoon Chinese five spice
- 15 grams fresh ginger
- 2 garlic cloves
- 1 tablespoon cornstarch
- salt
- sesame seeds, onions, peppers
We start by preparing the eggplant. We cut it into long strips about 7–8 centimeters long and about 1.5 centimeters wide. We place them in a bowl with cold water and one teaspoon of salt and let them soak for thirty minutes. This step helps remove bitterness and results in a better texture after cooking.
Meanwhile, we prepare the sauce. In a blender we add the soy sauce, brown sugar, rice wine vinegar, rice vinegar, sesame oil, chili paste, Chinese spice mix, finely chopped ginger and garlic. We blend until we obtain a smooth, intensely aromatic sauce. We transfer the sauce to a small saucepan and simmer it over low heat for about ten minutes, until it slightly thickens and the flavors come together.
We drain the eggplant and dry it very well with a paper towel. We place it in a bowl and sprinkle it evenly with cornstarch, gently mixing to coat all the pieces.
We heat a large pan and add one tablespoon of sesame oil. We fry the eggplant over medium heat for about 15 minutes, stirring occasionally, until it becomes golden and soft. We add the prepared sauce and cook for another two to three minutes, until the eggplant is well coated and lightly caramelized.
At the end, we sprinkle with sesame seeds, chopped green onions and, if we like it spicier, a few slices of chili pepper.
Sichuan Eggplant is served immediately, hot, alongside a simple portion of basmati rice, which perfectly balances the intense sauce. It is delicious as a vegetarian main dish, but also works wonderfully as a side for Asian dishes with meat or tofu.
