Daca ai impresia ca burgerii fara carne nu pot fi cu adevarat gustosi, reteta asta vine sa iti schimbe complet parerea. Burger picant de fasole cu halloumi este acel tip de preparat care te cucereste de la prima imbucatura, cu o combinatie surprinzatoare de texturi si arome. Este o reteta simpla, rapida si extrem de gustoasa, perfecta pentru momentele in care vrei ceva diferit, dar fara prea mult efort in bucatarie. Fasolea ofera consistenta si o baza satioasa, in timp ce halloumi aduce acea nota usor sarata si elastica care transforma totul intr-o experienta memorabila. Condimentele, legumele si dressingul cremos completeaza perfect acest burger vegetal, facandu-l ideal pentru un pranz sau o cina usoara. Este genul de reteta care imbina perfect ideea de mancare sanatoasa cu placerea pura de a manca ceva delicios.

INGREDIENTE (pentru 3 portii)
Pentru burger:
• 300 grame fasole neagra din conserva scursa
• 1 lingura ulei de masline
• 1 ceapa tocata marunt
• 2 catei de usturoi tocati
• 1/2 ardei iute tocat marunt
• 1 ardei copt tocat mare
• 1/2 lingurita chimen
• 1/2 lingurita boia afumata
• 1 ou batut
• 70 grame pesmet proaspat
• 2 cepe verzi tocate marunt
• 100 grame halloumi ras
• 3 chifle de burger prajite
• salata verde
Pentru dressing:
• 1 capatana mica de usturoi
• 1 lingurita ulei de masline
• 100 grame iaurt grecesc
• 1 lingurita mustar
• sucul de la 1/4 lamaie
• sare
Pentru ceapa murata:
• 1 ceapa rosie feliata subtire
• 2 linguri otet de mere
• 1 lingurita zahar
• 1 lingurita sumac

Incepem prin a incalzi cuptorul la 200 grade Celsius, pentru a pregati scena aromelor care urmeaza. Taiem capatana de usturoi pe jumatate, o asezam pe folie de aluminiu, o stropim cu ulei de masline si adaugam un praf de sare, apoi o impaturim bine. Pe o tava tapetata cu hartie de copt intindem jumatate din fasole intr-un strat uniform si introducem tava in cuptor alaturi de usturoi. Dupa aproximativ 25 pana la 30 de minute, fasolea devine usor crocanta, iar usturoiul moale si cremos. Le lasam sa se raceasca.
Intr-o tigaie incapatoare, incalzim uleiul de masline si adaugam ceapa, usturoiul, ardeiul iute si ardeiul copt. Gatim la foc mediu pana cand legumele devin moi si aromate, apoi adaugam chimenul si boiaua pentru un plus de savoare. Incorporam restul de fasole si amestecam bine, lasand compozitia sa se tempereze.

Transferam totul intr-un robot de bucatarie si mixam pana obtinem o pasta fina. Punem amestecul intr-un bol si adaugam fasolea coapta, oul, pesmetul, ceapa verde si halloumi ras. Rezulta o compozitie bogata si parfumata, perfecta pentru modelat.
Separat, pregatim ceapa murata amestecand ceapa rosie cu otetul, zaharul si sumacul, apoi o lasam sa se marineze. Pentru dressing, zdrobim usturoiul copt si il combinam cu iaurtul grecesc, mustarul, sucul de lamaie si sare, obtinand un sos cremos si echilibrat.

Formam burgerii si ii lasam la rece pentru aproximativ 30 de minute, apoi ii gatim intr-o tigaie incinsa pana devin aurii si crocanti la exterior. Prajim chiflele, apoi asamblam burgerii cu sos, chifteaua de fasole, ceapa murata si salata verde.
Fiecare strat contribuie la un gust final savuros si bine echilibrat. Servim simplu sau cu cartofi prajiti dupa plac.

INGREDIENTS (for 3 servings)
For the burgers:
• 300 g canned black beans, drained
• 1 tablespoon olive oil
• 1 onion, finely chopped
• 2 garlic cloves, minced
• 1/2 chili pepper, finely chopped
• 1 roasted red pepper, roughly chopped
• 1/2 teaspoon cumin
• 1/2 teaspoon smoked paprika
• 1 beaten egg
• 70 g fresh breadcrumbs
• 2 green onions, finely chopped
• 100 g grated halloumi
• 3 burger buns, toasted
• lettuce
For the dressing:
• 1 small head of garlic
• 1 teaspoon olive oil
• 100 g Greek yogurt
• 1 teaspoon mustard
• juice of 1/4 lemon
• salt
For the pickled onions:
• 1 red onion, thinly sliced
• 2 tablespoons apple cider vinegar
• 1 teaspoon sugar
• 1 teaspoon sumac
We start by preheating the oven to 200°C, setting the stage for the flavors to come. Cut the head of garlic in half, place it on aluminum foil, drizzle with olive oil, add a pinch of salt, and wrap it well. On a baking tray lined with parchment paper, spread half of the beans in an even layer and place the tray in the oven alongside the garlic. After about 25–30 minutes, the beans become slightly crispy and the garlic soft and creamy. Let them cool.
In a large pan, heat the olive oil and add the onion, garlic, chili pepper, and roasted pepper. Cook over medium heat until the vegetables become soft and fragrant, then add the cumin and smoked paprika for extra flavor. Stir in the remaining beans and mix well, then let the mixture cool slightly.
Transfer everything to a food processor and blend until you get a smooth paste. Place the mixture in a bowl and add the roasted beans, egg, breadcrumbs, green onions, and grated halloumi. You’ll get a rich and aromatic mixture, perfect for shaping.
Separately, prepare the pickled onions by mixing the red onion with vinegar, sugar, and sumac, then let them marinate. For the dressing, mash the roasted garlic and combine it with Greek yogurt, mustard, lemon juice, and salt to create a creamy, balanced sauce.
