INGREDIENTE (pentru 4 portii)
- 800 grame pulpe de pui dezosate
- 2 cepe mari
- 1 lingurita sare
- 1 lingurita chimen
- 1 lingurita paprika dulce
- 1/2 lingurita paprika iute
- 1 lingurita oregano
- 1 lingurita sumac
- 1 lingurita za’atar
- 150 grame iaurt grecesc
- 1 lingurita ulei de masline

Pentru Donerul de pui la cuptor – homemade version, incepem prin a curata pulpele de pui si a le toca fin in blender, pana devin o pasta cremoasa. Tocam ceapa marunt, o stoarcem bine ca sa scapam de excesul de zeama si o amestecam cu carnea. In acest moment adaugam toata magia: sarea, chimenul, paprika dulce si iute, oregano, sumacul, za’atarul, iaurtul grecesc si un strop de ulei de masline. Amestecam totul pana obtinem o compozitie parfumata si omogena, apoi o lasam la marinat peste noapte, sa aiba timp sa se imprieteneasca aromele intre ele.

A doua zi impartim amestecul in cateva portii si le intindem pe foi de copt intr-un strat subtire. Le rulam strans, ca pe niste mici rulade, si le coacem 30 de minute la 180°C. Odata scoase din cuptor, le desfacem, pastram sucul delicios pe care il lasa si rupem carnea in fasii. Le rumenim rapid in tigaie, doar cat sa prinda textura aceea usor crocanta la exterior.

Intre timp pregatim garnitura: eu am ales cartofii cuburi cu ierburi si usturoi de la Frescoverde – se fac super repede si ies perfect crocanti. La final, nu ne ramane decat sa montam totul: donerul fierbinte pe lipie calda, legume proaspete, ceapa rosie, varza, rosii cherry, ardei copt si un sos de iaurt cu usturoi care leaga toate aromele intr-un mod absolut genial.

It’s extremely easy to prepare, without complicated techniques, has an intense flavor thanks to the oriental spices, stays tender on the inside and slightly crispy on the outside, can be served in countless ways – in flatbread, on a plate, with salads, sauces or fries – and is also perfect for meal prep, keeping very well in the fridge.
INGREDIENTS (for 4 servings)
- 800 grams boneless chicken thighs
- 2 large onions
- 1 teaspoon salt
- 1 teaspoon cumin
- 1 teaspoon sweet paprika
- 1/2 teaspoon hot paprika
- 1 teaspoon oregano
- 1 teaspoon sumac
- 1 teaspoon za’atar
- 150 grams Greek yogurt
- 1 teaspoon olive oil
For the Baked Chicken Doner – homemade version, we start by cleaning the chicken thighs and chopping them finely in a blender until they become a creamy paste. We chop the onion finely, squeeze it well to remove the excess liquid and mix it with the meat. At this point we add all the magic: salt, cumin, sweet and hot paprika, oregano, sumac, za’atar, Greek yogurt and a drizzle of olive oil. We mix everything until we get a fragrant and homogeneous composition, then let it marinate overnight so the flavors have time to blend together.
The next day we divide the mixture into a few portions and spread each one onto baking paper in a thin layer. We roll them tightly, like small roulades, and bake them for 30 minutes at 180°C. Once out of the oven, we unwrap them, keep the delicious juices they release and tear the meat into strips. We quickly brown the strips in a pan, just enough to get that slightly crispy texture on the outside.
Meanwhile, we prepare the side dish: I used the herb and garlic potato cubes from Frescoverde – they cook super fast and turn out perfectly crispy. In the end, all that’s left is to assemble everything: the hot doner on warm flatbread, fresh vegetables, red onion, cabbage, cherry tomatoes, peppers and a garlic yogurt sauce that brings all the flavors together beautifully.
