INGREDIENTE (pentru 4 portii)
• 400 grame carne de vita
• 1 ardei gras rosu
• 2 cepe mari
• 4 catei de usturoi
• 1 lingurita oregano
• 1 lingurita chimen
• 1 lingurita sumac
• 2 linguri iaurt
• 1 lingura pasta de tomate
• 3 lipii
Pentru sos:
• 50 grame unt

A doua zi, impartim compozitia in trei parti egale si intindem uniform fiecare parte pe cate o lipie.

Adana Rolls
Adana Rolls – juicy, aromatic and absolutely irresistible Middle Eastern inspired bites! There are recipes that transform simple minced meat into a bold and memorable culinary experience. Adana Rolls are exactly that kind of dish: intensely flavored, gently spiced and perfectly balanced. Inspired by the famous Adana kebab, these oven-baked rolls keep the authentic aromas of cumin, sumac and garlic, but come in a practical, easy-to-make version you can prepare at home. Marinated overnight, the meat develops depth and richness, while the warm tomato and butter sauce added at the end elevates everything into a comforting yet impressive meal. They are perfect for a dinner with friends, a weekend with Turkish inspiration or simply when you crave something different, flavorful and satisfying. Served alongside spiced potatoes or a fresh salad, these rolls quickly become the star of the table.
INGREDIENTS (for 4 servings)
• 400 grams beef
• 1 red bell pepper
• 2 large onions
• 4 garlic cloves
• 1 teaspoon oregano
• 1 teaspoon cumin
• 1 teaspoon sumac
• 2 tablespoons yogurt
• 1 tablespoon tomato paste
• 3 flatbreads
For the sauce:
• 50 grams butter
• 3 tablespoons tomato paste
Peel the onions and bell pepper, cut them into large pieces and blend until smooth. Transfer the mixture to a bowl. Add the cubed beef to the blender and pulse until finely minced.
Squeeze the onion and pepper mixture well between your palms to remove excess liquid, then combine it with the minced beef. Add the crushed garlic, cumin, oregano, sumac, yogurt and tomato paste. Mix briefly until everything is evenly incorporated. Cover and refrigerate overnight so the flavors can fully develop.
The next day, divide the meat mixture into three equal portions and spread each portion evenly over a flatbread. Roll tightly and slice into pieces about 3 cm thick. Lightly grease a baking dish with olive oil and place the rolls cut-side up.
Bake in a preheated oven at 180°C (350°F) for about 40 minutes, until cooked through and nicely browned.
For the sauce, melt the butter over low heat and stir in the tomato paste until you get a smooth, warm sauce. Remove the rolls from the oven and spoon a little sauce over each one.
Serve the Adana Rolls hot, alongside spiced potatoes or a fresh vegetable salad. They are juicy, aromatic and full of character – a dish that brings a touch of the Middle East straight into your kitchen.
