Arayes este o reteta traditionala din bucataria orientala, ce imbina perfect aromele intense ale carnii condimentate cu textura crocanta a lipiei prajite. Acest preparat este rapid, usor de realizat si perfect pentru a impresiona musafirii sau pentru o cina savuroasa in familie. Combinatia dintre carnea suculenta, lipia aurie si crocanta, si sosul racoritor de iaurt transforma Arayes intr-un adevarat rasfat culinar.

INGREDIENTE (pentru 3 portii)

Pentru arayes:

  • 3 lipii
  • 500 grame carne de vita tocata
  • 1 ceapa
  • 2 catei de usturoi
  • 1 lingurita sare
  • 1/2 lingurita piper
  • 1/2 lingurita fulgi de chilli
  • 6 fire patrunjel verde
  • 1 ligura ulei de masline

Pentru sos:

  • 100 grame smantana
  • 150 grame iaurt grecesc
  • 1 ceapa verde
  • 4 fire patrunjel verde
  • 1 lingurita suc de lamaie
  • Sare

Intr-un bol, amestecam carnea de vita cu sare, piper si fulgi de chili. Adaugam ceapa, usturoiul si patrunjelul, toate tocate fin, si mixam bine pana cand compozitia devine omogena. Impartim amestecul de carne in 6 parti egale si modelam fiecare portie sub forma unui semicerc, de dimensiuni usor mai mici decat jumatatea unei lipii pita.

Taiem lipiile pita pe jumatate si deschidem cu grija fiecare bucata. Punem cate o portie de carne aplatizata in interiorul fiecarei jumatati de pita, apoi le inchidem si le presam usor pentru a se aplatiza.

Incindem o tigaie la foc mediu si o ungem cu putin ulei de masline. Cand este bine incinsa, asezam in tigaie cate doua jumatati de pita si le gatim timp de 5 minute pe fiecare parte, pana devin aurii si crocante. Apasam usor pe pita in timpul gatirii. Repetam acest proces pentru toate bucatile, adaugand ulei de masline in tigaie de fiecare data.

Intre timp pregatim sosul. Amestecam intr-un bol smantana, iaurtul, sarea, sucul de lamaie, patrunjelul si ceapa verde tocate marunt.

Presaram lipiile cu ceapa verde tocata marunt si servim alaturi de sosul de iaurt.

Arayes

Arayes is a traditional recipe from Middle Eastern cuisine, perfectly blending the intense flavors of spiced meat with the crispy texture of fried flatbread. This dish is quick, easy to prepare, and ideal for impressing guests or enjoying a delicious family dinner. The combination of juicy meat, golden, crispy pita bread, and refreshing yogurt sauce makes Arayes a true culinary delight.

INGREDINETS (for 3 servings)

For the Arayes:

  • 3 pita breads
  • 500 grams ground beef
  • 1 onion
  • 2 garlic cloves
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon chili flakes
  • 6 sprigs fresh parsley
  • 1 tablespoon olive oil

For the sauce:

  • 100 grams sour cream
  • 150 grams Greek yogurt
  • 1 green onion
  • 4 sprigs fresh parsley
  • 1 teaspoon lemon juice
  • Salt

In a bowl, mix the ground beef with salt, pepper, and chili flakes. Add finely chopped onion, garlic, and parsley, then mix until the composition is well blended. Divide the meat mixture into 6 equal portions and shape each into a semi-circle, slightly smaller than half a pita bread.

Cut the pita breads in half and carefully open each half. Place a portion of flattened meat inside each pita half, close it, and gently press to flatten slightly.

Heat a skillet over medium heat and lightly grease it with olive oil. Once hot, place two pita halves in the skillet and cook for 5 minutes on each side, until golden and crispy. Press lightly on the pita during cooking. Repeat this process for all pieces, adding olive oil to the skillet each time.

In a bowl, mix the sour cream, yogurt, salt, lemon juice, and finely chopped parsley and green onion.

Sprinkle the Arayes with finely chopped green onion and serve alongside the yogurt sauce.
