INGREDIENTE (pentru 4 portii)
Pentru muschiul de vita
- 1 kg muschi de vita
- 1 lingurita mix condimente (oregano si chilli)
- 50 grame unt
- Sare
Pentru crevetii in sos de usturoi, chilli si prosecco
- 350 grame creveti decorticati
- 2 catei de usturoi
- 1/4 lingurita fulgi de chilli
- 25 ml ulei de masline
- 1/2 lingurita boia dulce
- 1/2 lingurita oregano
- 100 ml prosecco
- Sare
Pentru cartofii crocanti
- 1 kg cartofi
- ulei de masline
- Sare

Taiem muschiul de vita in 4 bucati groase, de aproximativ 3 cm. Il presaram cu sare si il lasam la temperatura camerei aproximativ o ora si jumatate. Acest pas este foarte important pentru ca ajuta carnea sa se relaxeze si sa ramana suculenta dupa gatire. Dupa acest timp, stergem lichidul lasat, condimentam cu mixul de oregano si chilli si il gatim fie sous vide la 60 de grade Celsius timp de o ora, fie pe gratar sau in tigaie, 3-4 minute pe fiecare parte, pana ajungem la o temperatura interna de 60-62 de grade pentru un medium perfect. La final, il rumenim rapid in unt fierbinte, aproximativ doua minute pe fiecare parte, apoi il lasam la odihnit 10 minute, regula de aur daca vrei carne frageda si suculenta.

Intre timp ne ocupam de cartofi. Ii curatam, ii feliem subtire, ii tinem 15 minute in apa rece, apoi ii uscăm foarte bine. Ii asezam intr-un singur strat intr-o tava, ii stropim cu putin ulei de masline, presaram sare si ii coacem la 180 de grade Celsius timp de 25-30 de minute, pana devin aurii si crocanti.
Pentru creveti, ii curatam si ii decorticam daca nu sunt deja pregatiti. Ii condimentam cu sare, boia dulce si oregano si ii lasam 10-15 minute sa se imprieteneasca cu aromele. Incingem uleiul de masline intr-o tigaie, adaugam usturoiul zdrobit, fulgii de chilli si restul de boia, amestecam rapid si turnam prosecco. Lasam un minut la inabusit, apoi adaugam crevetii si ii gatim 4-5 minute, pana devin roz si suculenti, iar sosul capata consistenta si aroma intensa.

Pentru servire, asezam pe farfurie bucata de muschi de vita, adaugam deasupra crevetii cu tot cu sos, iar alaturi cartofii crocanti. Optional, o salata verde simpla completeaza perfect preparatul si aduce echilibru.

Perfectly cooked beef tenderloin, shrimp coated in a silky, lightly spicy sauce and crispy potatoes that bring everything together – all of it turns into a dish that instantly makes you say “just a little more sauce”. This is the kind of food that is not rushed, that is meant to be enjoyed slowly, that gathers people around the table and makes them go quiet at the first bite. Tender. Spicy. Slightly sweet. Intense. Exactly that chilli vibe that gives you energy and makes you swipe a piece of bread through the sauce without a second thought.
INGREDIENTS (serves 4)
For the beef tenderloin
- 1 kg beef tenderloin
- 1 teaspoon spice mix (oregano and chilli)
- 50 g butter
- Salt
For the shrimp in garlic, chilli and prosecco sauce
- 350 g peeled shrimp
- 2 garlic cloves
- 1/4 teaspoon chilli flakes
- 25 ml olive oil
- 1/2 teaspoon sweet paprika
- 1/2 teaspoon oregano
- 100 ml prosecco
- Salt
For the crispy potatoes
- 1 kg potatoes
- olive oil
- salt
Cut the beef tenderloin into 4 thick pieces, about 3 cm each. Season with salt and leave at room temperature for about one and a half hours. This step is essential, as it allows the meat to relax and stay juicy after cooking. After this time, pat it dry, season with the oregano and chilli mix and cook either sous vide at 60°C for 1 hour, or on a grill or in a pan for 3–4 minutes on each side, until the internal temperature reaches 60–62°C for a perfect medium. Finish by searing quickly in hot butter, about two minutes per side, then let the meat rest for 10 minutes – the golden rule for tender, juicy beef.
Meanwhile, prepare the potatoes. Peel them, slice them thinly, soak them in cold water for 15 minutes, then dry them very well. Arrange them in a single layer on a baking tray, drizzle with a little olive oil, sprinkle with salt and bake at 180°C for 25–30 minutes, until golden and crispy.
For the shrimp, clean and peel them if needed. Season with salt, sweet paprika and oregano and leave them for 10–15 minutes to absorb the flavors. Heat the olive oil in a pan, add the crushed garlic, chilli flakes and remaining paprika, stir briefly, then pour in the prosecco. Let it simmer for one minute, then add the shrimp and cook for 4–5 minutes, until they turn pink and juicy and the sauce becomes rich and aromatic.
To serve, place the beef tenderloin on the plate, top it with the shrimp and plenty of sauce, and add the crispy potatoes on the side. Optionally, a simple green salad works perfectly to balance the dish.
