Limba de vita cu sos de mustar – o reteta calda din caietul cu amintiri! Daca inchizi ochii si te lasi purtat de mirosul discret de foi de dafin si piper care pluteste din oala, s-ar putea sa te trezesti in bucataria bunicii, intr-o dupa-amiaza linistita de duminica. O masa alba, curata, aburinda, un sos galben-auriu care se prelinge lenes peste feliile de limba de vita si un zambet cald care te indeamna sa mai iei o portie. Astazi redeschidem caietul cu retete tihnite si iti propunem o mancare simpla, dar plina de suflet: Limba de vita cu sos de mustar, exact asa cum o faceau gospodinele cu rabdare si maini pricepute.

INGREDIENTE (pentru 4 portii))
Pentru pregatirea limbii:
- 1 limba de vita (aproximativ 600 – 700 grame)
- 1 morcov
- 1 pastarnac
- 1 felie de telina
- 2 foi de dafin
- 1 lingurita boabe piper
- 1 lingurita sare
Pentru sosul de mustar
- 50 ml smantana dulce
- 1 lingura mare mustar
- 3 fire patrunjel verde
- 1 galbenus
- 1 lingura de amidon
- Sare
- Piper

Primul pas e rabdarea. Spalam bine limba de vita si o lasam la inmuiat in apa rece vreo 3 ore, timp in care schimbam apa la fiecare jumatate de ora. Acest pas, oricat ar parea de banal, face diferenta – inlatura sangele, inmoaie fibra si pregateste carnea pentru o fierbere lina.
Pentru un rezultat rapid si eficient, folosim un ajutor de nadejde din bucataria moderna – Tefal One Pot, pe programul de gatire sub presiune. Dar daca preferi calea clasica, o oala obisnuita si putina veghere vor da acelasi rezultat, cu ceva mai mult timp alocat.
Asezam limba in oala, alaturi de legumele taiate, foile de dafin, boabele de piper si sarea. Turnam apa cat sa acopere totul bine si pornim programul: 60 de minute sub presiune. La final, lasam sa se depresurizeze, scoatem limba pe o farfurie si, cat inca e calda, indepartam pielita groasa care o inveleste. E momentul care ne face sa intelegem de ce se spune ca rabdarea e cheia bucatarului: in spatele cojii se ascunde o carne frageda, delicata, cu o textura fina care se topeste in gura.
Un mic secret: pastram limba decojita in supa fierbinte, ca sa nu se usuce, pana cand e gata sosul.

Intr-o craticioara curata, punem smantana dulce, mustarul, galbenusul si patrunjelul tocat marunt. Amestecam cu blandete, apoi incalzim la foc mic, fara sa dam in clocot. Separat, dizolvam amidonul intr-un strop de apa rece si-l turnam peste sos. Mai lasam 2–3 minute pe foc, pana ce capata consistenta unei catifele usor fluide. Asezonam cu sare si piper, dupa gust.
Feliem limba in bucati potrivite si o asezam cu grija pe un platou, lasand loc sosului sa se aseze frumos peste carne. Presaram deasupra un praf de piper proaspat macinat, apoi adaugam cu darnicie sosul catifelat de mustar. Alaturam preparatului o salata verde crocanta si castraveti murati usor acrisori, pentru un contrast proaspat si echilibrat – exact asa cum se obisnuia odinioara, in mesele simple si pline de gust.

Pentru a completa armonios acest fel clasic, servim alaturi un pahar de BARSENTO Ladislao 2021 Negroamaro IGP Puglia – un vin obtinut din struguri de Negroamaro, cu o culoare intensa, rosu inchis. Acesta ofera arome bogate de cirese coapte, tutun si roscove. Gustul este corpolent, cu taninuri bine echilibrate si accente de stejar vanilat. Strugurii sunt culesi la sfarsitul lunii septembrie, fermentatia avand loc in tancuri inoxidabile, urmata de o maturare lenta in butoaie mari de stejar, care ii confera vinului eleganta si profunzime. Un pairing clasic, cu suflet italian si radacini romanesti – pentru mese tihnite si gusturi care spun povesti.

Beef Tongue with Mustard Sauce – A Warm Recipe from the Notebook of Memories! If you close your eyes and let yourself be carried by the subtle scent of bay leaves and pepper rising from the pot, you might find yourself in your grandmother’s kitchen on a quiet Sunday afternoon. A clean white table, gently steaming, a golden-yellow sauce lazily cascading over slices of beef tongue, and a warm smile inviting you to take another helping. Today we reopen the recipe notebook filled with slow, soul-soothing dishes and bring you a simple yet heartwarming meal: Beef Tongue with Mustard Sauce, just like the patient and skilled hands of old used to make.
INGREDIENTS (for 4 srvings)
For the beef tongue:
- 1 beef tongue (approx. 600–700 g)
- 1 carrot
- 1 parsnip
- 1 slice of celery root
- 2 bay leaves
- 1 teaspoon whole peppercorns
- 1 teaspoon salt
For the mustard sauce:
- 50 ml heavy cream
- 1 generous tablespoon mustard
- 3 sprigs fresh parsley
- 1 egg yolk
- 1 tablespoon cornstarch
- Salt
- Pepper
Wash the beef tongue thoroughly and soak it in cold water for about 3 hours, changing the water every 30 minutes. It might seem like a small detail, but it makes all the difference—removing the blood, softening the fibers, and preparing the meat for a gentle boil.
For a quicker and more efficient result, we use a trusty kitchen helper—the Tefal One Pot—on the pressure cooking setting. But if you prefer the traditional way, a regular pot and a bit of watchfulness will do just fine, though it will take a bit longer.
Place the tongue in the pot along with the chopped vegetables, bay leaves, peppercorns, and salt. Pour in enough water to cover everything well and set the program for 60 minutes under pressure. When it’s done, let the pressure release naturally, then transfer the tongue to a plate. While still warm, carefully peel off the thick outer skin. This is the moment you truly appreciate the saying: patience is the key to good cooking. Beneath that layer lies tender, delicate meat with a fine texture that melts in your mouth.
A little tip: keep the peeled tongue in the hot broth until the sauce is ready, so it stays moist and tender.
In a clean saucepan, combine the heavy cream, mustard, finely chopped parsley, and egg yolk. Stir gently, then warm over low heat, making sure it doesn’t boil. Separately, dissolve the cornstarch in a bit of cold water and pour it into the sauce. Let it simmer for another 2–3 minutes, until it reaches a silky, slightly fluid texture. Season with salt and pepper to taste.
Slice the beef tongue into even pieces and arrange them carefully on a serving platter, making space for the mustard sauce to settle beautifully over the meat. A touch of freshly ground black pepper is sprinkled on top, followed by a generous pour of the velvety mustard sauce. On the side, we serve a crisp green salad and tangy pickled cucumbers for a refreshing contrast in textures and flavors—just like in the good old days, when meals were simple but full of heart. To elevate this classic dish, we pair it with a glass of BARSENTO Ladislao 2021 Negroamaro IGP Puglia—a wine made from Negroamaro grapes, showcasing an intense deep red color.
