Crispy Hake Baguette with Roasted Garlic & Veggie Sauce

Crispy Hake Baguette with Roasted Garlic & Veggie Sauce – spicy, bold, and full of flavor! ! There are sandwiches… and then there are baguettes you remember. This one, with crispy hake, fresh greens, and a garlicky roasted pepper & tomato sauce, is the kind that hits the spot instantly. It has everything: crunchy fish, rich garlic sauce, crisp salad, and a golden baguette to bring it all together. It’s easy to make, quick, and doesn’t require heavy frying – especially if you’ve got an Actifry or a good oven that knows how to crisp things up without too much oil. Perfect for a hearty lunch or a “serious but still light” dinner.

INGREDIENTS (for 2 servings)

  • 2 baguettes
  • 500 grams hake fillets
  • 4 tbsp cornmeal
  • 2 tsp olive oil
  • Salt
  • 300 grams ripe tomatoes
  • 3 red bell peppers (kapia)
  • 4 garlic cloves
  • ½ bunch fresh parsley
  • Lettuce, for serving

Start with the fish. If you’re using frozen hake, thaw it overnight in the fridge. Clean, fillet, and pat it dry. Sprinkle with coarse salt and let it rest in the fridge for 2–3 hours to firm up and deepen the flavor.

Next, the star of the show: the roasted veggie garlic sauce. Roast the peppers and tomatoes until charred and soft. Let them drain well (you want a rich sauce, not a watery one), then blend with the garlic and salt until smooth and creamy. Stir in finely chopped parsley and let the flavors mingle.

Take the fish out of the fridge, coat it in cornmeal, drizzle with olive oil, and cook it in the Actifry or bake at 180°C (356°F) for about 20 minutes, until golden and crispy.

Slice the baguettes in half, generously spread the garlic veggie sauce, add the crispy hake, and top with chopped lettuce. Want to level it up? Add some thinly sliced red onion or pickles for an extra taste.

Eat it hot, right away – it’s best that way. But it’s also great packed for lunch or even a weekend picnic in the park.
