INGREDIENTE (pentru 2 portii)

 Pentru carne si legume:

  • 250 grame rib eye de vita (sau alt tip de carne frageda)
  • 250 grame broccoli
  • 3 catei de usturoi
  • 1 lingura ulei de susan (sau ulei picant – dupa gust)

Pentru marinada:

  • 1 lingura sos de soia
  • 1 lingura sos de soia dark
  • ¼ lingurita fulgi de chilli
  • 1 lingurita ulei de susan
  • 1 lingurita amidon
  • 1 lingura otet de orez
  • 1 lingurita ulei de masline
  • 1 lingurita zahar sau indulcitor
  • Sare, dupa gust

Pentru sos:

  • 2 linguri sos de stridii
  • 1 lingurita sos de soia
  • 1 lingurita amidon
  • 1 lingurita zahar sau indulcitor
  • 100 ml supa de vita (ex: Zwup)

Totul incepe cu pregatirea carnii. Alegem o bucata frageda de rib eye pe care o punem 45 de minute la congelator, suficient cat sa devina ferma si usor de feliat. Cu un cutit foarte bine ascutit, taiem carnea in felii foarte subtiri si o punem intr-un bol incapator. Aici adaugam sosul de soia clasic si dark, fulgii de chilli, uleiul de susan, amidonul, otetul de orez, uleiul de masline, zaharul si un praf de sare. Acoperim totul si lasam carnea la frigider timp de 24 de ore, ca aromele sa patrunda bine.

A doua zi, ne ocupam de broccoli: il desfacem in buchetele si il gatim la abur pentru 10 minute, cat sa ramana crocant si viu colorat. Intre timp, incingem bine o tigaie wok cu ulei de susan, ulei picant sau o combinatie dintre cele doua, in functie de cat de intens vrem sa fie gustul. Adaugam carnea marinata si o sotam rapid, la foc mare, timp de aproximativ 5 minute. Urmeaza broccoli-ul si usturoiul tocat fin – mai lasam pe foc inca 2-3 minute.

Separat, intr-un bol mic, pregatim sosul care le va lega pe toate: sos de stridii, un strop de sos de soia, amidon, zahar si supa de vita. Turnam sosul peste carne si legume si mai lasam pe foc 5 minute, amestecand usor, pana cand totul se imbraca intr-un strat lucios si catifelat.

La final, presaram seminte de susan si servim imediat, fierbinte, simplu sau cu o portie de orez basmati aburind. Rezultatul? O cina delicioasa, cu arome asiatice autentice, pe care o poti savura chiar la tine acasa, fara sa dai comanda de takeout.

For the beef and vegetables:

  • 250 grams ribeye beef (or any tender cut)
  • 250 grams broccoli
  • 3 garlic cloves
  • 1 tbsp sesame oil (or chili oil, to taste)

For the marinade:

  • 1 tbsp light soy sauce
  • 1 tbsp dark soy sauce
  • ¼ tsp chili flakes
  • 1 tsp sesame oil
  • 1 tsp cornstarch
  • 1 tbsp rice vinegar
  • 1 tsp olive oil
  • 1 tsp sugar or sweetener
  • Salt, to taste

For the sauce:

  • 2 tbsp oyster sauce
  • 1 tsp soy sauce
  • 1 tsp cornstarch
  • 1 tsp sugar or sweetener
  • 100 ml beef broth (e.g. Zwup or homemade)

Start by prepping the beef. Choose a tender ribeye and place it in the freezer for 45 minutes—just enough to make it firm and easy to slice thinly. Using a very sharp knife, cut the meat into thin strips and place them in a large bowl.

Add the light and dark soy sauce, chili flakes, sesame oil, cornstarch, rice vinegar, olive oil, sugar, and a pinch of salt. Mix well, cover, and refrigerate for 24 hours to let the flavors soak in.

The next day, prep the broccoli: break it into florets and steam for 10 minutes until crisp and bright green. Meanwhile, heat a wok over high heat with sesame oil, chili oil, or a mix of both—depending on how intense you want the flavor. Add the marinated beef and stir-fry quickly for about 5 minutes.

Add the steamed broccoli and finely chopped garlic. Cook for another 2–3 minutes.
