INGREDIENTE (pentru 4 portii)
- 200 grame orez Jasmin
- 300 ml apa
- 400 grame muschi de vita
- 3 linguri ulei de floarea soarelui
- 2 linguri uluei de susan
- 4 linguri sos de soia
- 3 lingura sos de soia dark
- 1 lingura amidon de porumb
- 1 lingurita de zahar
- 1/2 lingurita chilli
- 1 lingura de ulei cu chilli
- 3 oua
- 1/4 lingurita piper
- 3 cepe verzi
- 100 grame praz
- 50 grame morcov
- 50 grame mazare
- Cozi de ceapa verde pentru decor
- Susan
- Sare

Pentru a obtine cel mai gustos orez prajit cu vita, trebuie sa ne organizam din timp, incepand preparativele cu cel putin 24 de ore inainte. Desi poate parea un efort considerabil, va asigur ca rezultatul va fi pe masura – un preparat plin de savoare si texturi perfect echilibrate.
Incepem prin a spala bine orezul sub jet de apa rece, intr-o strecuratoare, pana cand lichidul devine complet limpede. Transferam orezul intr-o cratita, adaugam 300 ml de apa si o lingurita de sare, apoi il fierbem la foc mic timp de aproximativ 30 de minute. Dupa fierbere, il transferam intr-un bol, il acoperim cu un prosop de hartie si un capac si il lasam sa se odihneasca inca 10 minute. Pentru a obtine o textura ideala, aerisim usor boabele cu ajutorul unei furculite, apoi il lasam la rece pana a doua zi.

Pentru un gust intens si o textura frageda, este esential sa marinam carnea corespunzator. Incepem prin a lasa muschiul de vita la congelator pentru 30-40 de minute, astfel incat sa il putem felia foarte subtire. Punem feliile intr-un bol si adaugam 2 linguri de ulei de floarea-soarelui, 1 lingura de ulei de susan, 2 linguri de sos de soia, 1 lingura de sos de soia dark, ½ lingurita de sare, 1 lingura de amidon de porumb, 1 lingurita de zahar si ½ lingurita de chilli. Amestecam bine pentru a acoperi fiecare felie de carne cu acest amestec aromat, apoi lasam la marinat peste noapte.
Dupa o asteptare rasplatita de intensitatea aromelor, este momentul sa ne apucam de gatit.
Incingem o lingura de ulei cu chilli intr-un wok si adaugam carnea marinata. O gatim la foc mare timp de aproximativ 7 minute, amestecand constant, pana cand se rumeneste uniform. O scoatem apoi intr-un bol si o pastram deoparte.
Intr-un bol separat, batem 3 oua cu sare si ¼ lingurita de piper. In aceeasi tigaie, adaugam o lingura de ulei vegetal si turnam ouale, amestecand continuu pana cand obtinem o omleta usor rumenita. O transferam intr-un alt bol.

Adaugam in wok o lingura de ulei de susan, apoi sotam rapid morcovii, ceapa verde si prazul taiate fin, in bastonase subtiri. Calim la foc mare timp de 2 minute, amestecand constant, apoi adaugam orezul rece si mazarea. Continuam sa gatim inca 3 minute, dupa care incorporam 2 linguri de sos de soia, carnea gatita si omleta taiata bucati. La final, adaugam 2 linguri de sos de soia dark si mai gatim inca 2 minute, pentru ca toate ingredientele sa se armonizeze perfect.
Presaram deasupra seminte de susan si cozi de ceapa verde fin tocate pentru un plus de prospetime. Se serveste fierbinte, savurat cu pofta si apreciat pentru combinatia perfecta de texturi si arome.

- 3 tbsp sunflower oil
- 2 tbsp sesame oil
- 4 tbsp soy sauce
- 3 tbsp dark soy sauce

- 1 tsp sugar
- 1/2 tsp chili powder
- 1 tbsp chili oil
- 3 eggs
- 1/4 tsp black pepper
- 3 green onions
- 100g leek
- 50g carrot
- 50g peas
- Green onion tops for garnish
- Sesame seeds
- Salt
To achieve the best beef fried rice, planning ahead is key—start prepping at least 24 hours in advance. While it may seem like a lot, trust me, the final result is worth it—a dish full of rich flavors and perfectly balanced textures.
Begin by thoroughly rinsing the rice under cold water in a strainer until the water runs clear. Transfer the rice to a pot, add 300ml of water and 1 teaspoon of salt, and cook on low heat for about 30 minutes. Once done, transfer the rice to a bowl, cover it with a paper towel and a lid, and let it rest for 10 more minutes. Then, gently fluff it up with a fork to separate the grains and place it in the fridge overnight.
For maximum flavor and the most tender texture, marinating the beef is essential. Start by placing the beef tenderloin in the freezer for 30-40 minutes—this makes it easier to slice thinly. Once firm, cut the beef into very thin slices and place them in a bowl. Add 2 tbsp sunflower oil, 1 tbsp sesame oil, 2 tbsp soy sauce, 1 tbsp dark soy sauce, 1/2 tsp salt, 1 tbsp cornstarch, 1 tsp sugar, and 1/2 tsp chili powder.
