Taietei prajiti cu vita si spanac – wok-ul care aduce restaurantul la tine acasa! Cand spunem noodles + vita + wok + arome asiatice, deja stim ca urmeaza ceva bun. Genul de preparat care se gateste repede, miroase incredibil si arata ca si cum ar fi iesit direct dintr-un restaurant asiatic autentic. Taieteii prajiti cu vita si spanac sunt fix asa: gustosi, suculenti, usor picanti, cu textura perfecta a taiteilor si carne frageda care se topeste. Iar cheia este carnea. Am folosit, ca de obicei, vita de la vecinii mei de la Butchers Cuisine – pentru ca diferenta se simte. Carnea e maturata corect, frageda, cu fibra fina, perfecta pentru a fi taiata subtire si gatita la foc mare. Daca folosesti o carne buna, reteta asta trece instant din „gustos” in „wow, trebuie repetata”. Apoi, totul se leaga simplu: taietei moi, legume crocante, sos umami, spanac adaugat la final pentru prospetime. Se face repede. Se mananca si mai repede.

INGREDIENTE (pentru 4 portii)
• 500 g ramp de vita maturat (Butchers Cuisine)
• 400 g taitei de orez
• 3 cepe albe
• 2 ardei kapia
• ½ ardei iute rosu (optional)
• 4 catei de usturoi
• 100 g baby spanac
• 3 fire ceapa verde
• 1 lingura sos de stridii
• 2 linguri ulei de susan
• 1 lingura ulei cu chilli (sau vegetal)
• 2 linguri sos de soia
• 1 lingura otet de orez
• 1 lingurita zahar
• 100 ml supa de vita
• 4 lingurite seminte de susan
• Sare

Ca de obicei, am ales o carne de vita foarte proaspata si gustoasa cu fibra fina ce se gateste rapid, ramanand frageda si suculenta. Pentru a o felia perfect subtire, punem carnea la congelator timp de 30 de minute. Atata ii trebuie ca sa se intareasca usor si sa se taie frumos, fara sa se rupa.
Dupa cele 30 de minute, o scoatem si o taiem in fasii foarte subtiri cu un cutit bine ascutit. Le presaram cu sare si le lasam deoparte cat pregatim legumele.
Curatam ceapa alba si o taiem julienne. Ardeiul kapia il taiem in fasii subtiri. Ardeiul iute este optional – daca ne place mancarea picanta, il taiem rondele subtiri. Usturoiul il zdrobim si il tocam marunt.

Incingem un wok la foc mare si adaugam o lingura de ulei de susan. Prajim carnea in transe, fara sa suprapunem bucatile – avem nevoie de contact direct cu tigaia ca sa se rumeneasca frumos. Gatim cate 1 minut pe fiecare parte. Pe masura ce carnea se rumeneste, o scoatem intr-un bol si continuam pana terminam toata cantitatea.
In acelasi wok, mai adaugam o lingurita de ulei de susan si 1 lingura de ulei cu chilli (sau ulei vegetal, daca nu vrem picant). Punem ceapa julienne si o calim 2 minute la foc mare. Adaugam ardeiul kapia, ardeiul iute si usturoiul. Gatim 5 minute, amestecand din cand in cand, cat sa se inmoaie usor dar sa ramana crocante.

Intre timp pregatim sosul: intr-un bol amestecam sosul de soia, sosul de stridii, otetul de orez, supa de vita si zaharul. Omogenizam.
Cand legumele sunt usor gatite, adaugam carnea inapoi in wok, impreuna cu ceapa verde tocata in bucati de 3 cm. Amestecam si mai lasam 2 minute pe foc.
Turnam sosul pregatit peste carne si legume si mai lasam 5 minute sa se lege aromele. Sosul trebuie sa imbrace bine ingredientele.
La final, adaugam frunzele de baby spanac si taieteii de orez, pe care i-am pregatit separat conform instructiunilor de pe ambalaj. Amestecam usor si mai gatim 1–2 minute, doar cat spanacul sa se inmoaie.
Servim imediat, presarand deasupra ceapa verde tocata fin si seminte de susan.

Fried Rice Noodles with Beef and Spinach
Fried rice noodles with beef and spinach – the kind of wok that brings the restaurant right into your kitchen! When we say noodles + beef + wok + Asian flavors, we already know something good is about to happen. This is the kind of dish that cooks fast, smells incredible and looks like it came straight out of a real Asian restaurant. These fried noodles with beef and spinach are exactly that: flavorful, juicy, slightly spicy, with perfectly chewy noodles and tender beef that melts in your mouth. And the key is the meat. As always, I used beef from my neighbors at Butchers Cuisine – because the difference truly shows. The meat is properly aged, tender, with fine grain, perfect for slicing thin and cooking quickly over high heat. If you start with good meat, this recipe instantly shifts from “tasty” to “wow, this needs to be repeated.” Then everything comes together simply: soft noodles, crisp vegetables, umami sauce, and spinach added at the end for freshness. It cooks fast. It disappears even faster.
INGREDIENTS (for 4 servings)
• 500 grams aged beef rump (Butchers Cuisine)
• 400 grams rice noodles
• 3 white onions
• 2 kapia peppers
• ½ red chili (optional)
• 4 garlic cloves
• 100 grams baby spinach
• 3 green onions
• 1 tablespoon oyster sauce
• 2 tablespoons sesame oil
• 1 tablespoon chili oil (or vegetable oil)
• 2 tablespoons soy sauce
• 1 tablespoon rice vinegar
• 1 teaspoon sugar
• 100 ml beef broth
• 4 teaspoons sesame seeds
• Salt
Just like always, I went for the beef from Butchers Cuisine. It has fine fibers and cooks beautifully, staying tender and juicy. To slice it perfectly thin, place the beef in the freezer for 30 minutes. That’s all it needs to firm up just enough to slice cleanly without tearing.
After 30 minutes, remove it and slice into very thin strips with a sharp knife. Sprinkle lightly with salt and set aside while preparing the vegetables.
Peel the white onions and slice them julienne. Slice the kapia peppers into thin strips. If you like spicy food, slice the chili into thin rings. Crush the garlic and chop finely.
Heat a wok over high heat and add one tablespoon of sesame oil. Sear the beef in batches, making sure not to overlap the slices – we need direct contact with the wok to get a good sear. Cook about 1 minute per side. Transfer each batch to a bowl and continue until all beef is done.
In the same wok, add another teaspoon of sesame oil and one tablespoon of chili oil (or vegetable oil). Add the sliced onion and stir-fry for 2 minutes over high heat. Add the kapia pepper, chili and garlic. Stir-fry for 5 minutes, stirring occasionally, until the vegetables soften slightly but stay crisp.
Meanwhile, prepare the sauce: in a small bowl mix soy sauce, oyster sauce, rice vinegar, beef broth and sugar. Stir to combine.
When the vegetables are ready, return the beef to the wok along with the green onion cut into 3 cm pieces. Stir and cook for another 2 minutes.
Pour the sauce over the beef and vegetables and let it cook for 5 minutes so the flavors come together. The sauce should coat the ingredients, not be watery.
Finally, add the baby spinach and the rice noodles (prepared separately according to package instructions). Stir gently and cook for 1–2 minutes, just until the spinach softens.
Serve immediately, topped with finely chopped green onion and sesame seeds.
