Ostropel de vita – reteta clasica, gustoasa si extra-frageda, ca la mama acasa! Daca exista o mancare care sa spuna instant “copilarie”, aceea este ostropelul. Un fel simplu, cald, plin de sos si de amintiri bune. Ostropelul de vita este varianta aceea pe care o faceau mamele si bunicile cand voiau “ceva bun, facut cu suflet”. Carnea frageda, ceapa dulce, sosul legat si aromat – toate transforma acest preparat intr-un comfort food romanesc autentic, care te face sa mai pui o portie. Este o reteta perfecta pentru familie, usor de facut, economica si incredibil de gustoasa. Iar cheia este carnea: un muschi alb de vita proaspat, fraged, calit lent intr-un sos aromat, pana cand se topeste. Eu am dat o fuga la vecinii mei de la Butchers Cuisine si am gasit fix bucata aceea pe care o cautam – rozalie, proaspata, cu textura perfecta pentru ostropel. Rezultatul? Exact gustul acela pe care il stiam din copilarie, dar cu un plus de rafinament.

INGREDIENTE (pentru 4 portii)

• 800 grame muschi alb de vita
• 500 grame ceapa alba
• 5 catei de usturoi
• 50 grame faina
• 2 linguri ulei
• 300 ml supa de vita sau de pui (Zwup)
• Sare
• Piper

Ostropel de vita

Taiem vita in felii subtiri, apoi o fragezim usor cu un ciocan pentru snitele – exact cat sa devina supla si sa se gateasca uniform. O presaram cu sare si o lasam 20–30 de minute la rece sa se “imprieteneasca” aromele.

Intr-o punga groasa punem cele 2 linguri de faina (eu am folosit faina integrala, dar merge orice tip). Adaugam feliile de carne si scuturam bine pentru ca fiecare bucata sa fie perfect acoperita. Scuturam excesul de faina.

Incingem o tigaie cu putin ulei – eu doar am uns tigaia pentru o varianta mai light, dar reteta originala permite mai mult ulei pentru un gust mai bogat. Prajim carnea in transe, cate 2 minute pe fiecare parte, pana capata o usoara crusta aurie. O scoatem intr-un bol.

Curatam ceapa si o taiem julienne. O punem intr-o cratita impreuna cu putin ulei si 100 ml de apa. Adaugam sare si o inabusim pana devine moale si translucida.

Adaugam carnea inapoi peste ceapa. Turnam jumatate din cantitatea de supa si acoperim cu capacul. Eu am folosit supa de pui pentru un gust mai delicat, fara aroma intensa de vita.

Gatim la foc mic timp de aproximativ 60 de minute, amestecand ocazional. Completam cu supa ori de cate ori este necesar, astfel incat sa rezulte un sos legat, consistent, cremos si delicios.

Servim ostropelul fierbinte, cu cartofi natur sau un piure pufos. Este genul acela de mancare care aduce liniste, bucurie si confort intr-o zi obositoare.

Romanian Beef Stew in Onion & Garlic Sauce – the classic, delicious and extra-tender recipe, just like mom used to make! If there’s a dish that instantly says “childhood”, it’s beef stew. A simple, comforting meal, full of sauce and good memories. The beef stew in onion and garlic sauce is that version our mothers and grandmothers made when they wanted “something good, made with love.” Tender meat, sweet onions, a rich and flavorful sauce – all of it turns this dish into authentic Romanian comfort food, the kind that makes you forget any diet and go for another serving. It’s a perfect family recipe: easy to make, budget-friendly, and incredibly tasty. And the key is the meat: fresh, tender beef, slowly cooked in a fragrant sauce until it practically melts. I stopped by my neighbors at Butchers Cuisine and found exactly the cut I was looking for – rosy, fresh, with the perfect texture for stew. The result? Exactly the flavor I remembered from childhood, but with an extra touch of refinement.

INGREDIENTS (for 4 servings)

  • 800 grams beef tenderloin
  • 500 grams white onion
  • 5 garlic cloves
  • 50 grams flour
  • 2 tbsp oil
  • 300 ml beef or chicken broth
  • Salt
  • Pepper

Cut the beef into thin slices, then tenderize lightly with a meat mallet—just enough to make it supple and help it cook evenly. Sprinkle with salt and let it rest in the fridge for 20–30 minutes so the flavors can “get to know each other.”

Place the 2 tablespoons of flour in a thick plastic bag (I used whole-wheat flour, but any type works). Add the meat slices and shake well so each piece is perfectly coated. Shake off the excess flour.

Heat a pan with a little oil—I only brushed the pan for a lighter version, but the original recipe allows for more oil for a richer taste. Fry the meat in batches, about 2 minutes on each side, until it gets a light golden crust. Transfer to a bowl.

Peel the onions and slice them julienne. Place them in a pot with a bit of oil and 100 ml of water. Add salt and cook them gently until soft and translucent.

Add the meat back over the onions. Pour in half of the broth and cover with a lid. I used chicken broth for a more delicate flavor, without the strong beef aroma.

Cook on low heat for about 60 minutes, stirring occasionally. Add more broth whenever needed so you end up with a thick, smooth, creamy and delicious sauce.

When the meat is tender and the sauce nicely formed, turn off the heat.

Serve the stew hot, with boiled potatoes or a fluffy mashed potato—you’ll surely end up licking the plate clean. It’s the kind of food that brings comfort, joy and calm on a tiring day.
