Budinca cu paste si branza de vaci

Arome subtile de vanilie si lamaie intr-o branza de vaci dulce si cremoasa acompaniata de paste artizanele, invelite intr-o crusta crocanta de pesmet si desavarsite cu o smantana aromata cu lamaie. Este un desert de week-end absolut delicios. Asa cum spun de fiecare data, secretul retetei consta si in alegerea unor ingrediente de calitate: paste artizanale, oua de la ferma, branza de vaci si smantana de la Laptareasa din Tohan.

INGREDIENTE / INGREDIENTS

(pentru 6 portii / for 6 servings)

  • 150 grame paste artizanale / 150 grams artisanal noodles
  • 500 ml lapte / 500 ml milk
  • 125 grame zahar / 125 grams sugar
  • 2 oua / 2 eggs
  • 300 grame branza de vaci / 300 grams cottage cheese
  • 50 grame stafide / 50 grams raisins
  • 1 lingura coaja de lamaie / 1 teaspoon lemon zest
  • 1 lingura esenta de vanilie / 1 tablespoon vanilla flavour
  • Sare / Salt
  • 20 grame unt / 20 grams butter
  • 2 linguri pesmet / 2 tablespoons breadcrumbs

Punem laptele la incalzit, iar in momentul in care fierbe adaugam pastele. Lasam sa fiarba timp de 10 minute la foc mic, amestecand constant. Lasam sa se racoreasca.

Intre timp, batem spuma albusurile cu un praf de sare si zaharul. Adaugam apoi galbenusurile, stafidele, vanilia, coaja de lamaie si branza de vaci. La sfarsit incorporam taieteii cu lapte amestecand usor pana cand cele doua compozitii devin omogene.

Ungem o forma termorezistenta cu unt si o presaram cu pesmet. Rasturnam compozitia de paste si branza si presaram deasupra restul de pesmet si cateva fasii de unt. Coacem in cuptorul incins la 170 grade Celsius timp de 35 de minute.

Servim cu smantana aromatizata cu coaja de lamaie.

Pasta & Cottage cheese pudding

Subtile aromas of vanilla and lemon in a sweet and creamy cottage cheese accompanied by artisan pasta, wrapped in a crispy crust of breadcrumbs and topped with a cream flavored with lemon. This is an absolutely delicious weekend dessert. As I say every time, the secret of the recipe is to choose quality ingredients: artisanal pasta, farm eggs, cottage cheese and sour cream from Laptareasa din Tohan.

Boil the milk, and when it boils add the pasta. Let it boil for 10 minutes on low heat, stirring constantly. Let it cool.

Meanwhile, whisk the egg whites with a pinch of salt and sugar. Then add the yolks, raisins and cottage cheese. At the end, incorporate the milk noodles, mixing gently until the two compositions become homogeneous.

Grease a form with butter and sprinkle with breadcrumbs. Pour the pasta and cheese mixture and sprinkle the remaining breadcrumbs and a few slices of butter. Bake in a hot oven at 170 degrees Celsius for 35 minutes.

Serve with sour cream flavored with lemon zest.
