Exista preparate care iti aduc aminte instant de o masa de familie lunga, de duminica, cu miros de cuptor cald si o farfurie care te asteapta rabdatoare pe masa. Cozonac de carne bavarez — sau Leberkäse, cum il stiu nemtii — este exact unul dintre ele. Nu e un preparat complicat, nu cere ingrediente greu de gasit, dar rezultatul este surprinzator de elegant: o felie densa, rumena, aromata, cu o crusta usor crocanta si un interior moale, plin de gust. Este tipul de mancare pe care o faci o data si dupa care o repeti cu drag, de fiecare data cand vrei ceva consistent si cu adevarat bun. Secretul acestei retete sta in amestecul de condimente bavareze — un mix aromat, pregatit separat, care da caracterul intregului preparat. Odata ce ai combinatia asta gata, restul vine de la sine.

INGREDIENTE (pentru 4-6 portii)

Pentru amestecul de condimente bavareze:

  • 1 lingurita boabe de mustar
  • 1 seminte de chimen
  • 1/2 lingurita sare de mare cu chilli si rozmarin
  • ½ lingurita piper rosu
  • 1 lingurita oregano uscat
  • 1 lingurita sare
  • 20 g rosii uscate la soare
  • 1 lingurita fulgi de usturoi
  • 1 priza piper cayenne macinat (dupa gust)
  • 1 lingurite boia de ardei

Pentru cozonacul de carne:

  • ulei de masline extravirgin (pentru uns forma)
  • 200 g fleica de porc fara os si fara soric, taiata bucati de 3 cm
  • 80 g cuburi de gheata
  • 30 g ceapa galbena
  • 300 g carne tocata de porc
  • 70 g apa minerala carbogazoasa

Incepem cu amestecul de condimente bavareze, care poate fi pregatit din timp si pastrat intr-un recipient etans. Punem intr-un mojar sau intr-un blender mic semintele de mustar, semintele de fenicul, boabele de coriandru, rozmarinul si oregano si le macinam bine, pana obtinem o pulbere fina si parfumata. Adaugam sarea de mare si rosiile uscate la soare si continuam sa macinam pana cand totul devine omogen. La final, incorporam fulgii de usturoi, piperul cayenne si boia de ardei si mai amestecam un minut, pana cand mirosul din bucatarie devine pur si simplu irezistibil. Punem deoparte.

Preincalzim cuptorul la 130°C. Ungem cu ulei de masline o forma de chec de aproximativ 21 x 7,5 x 5 cm si o punem deoparte.

Cozonac de carne bavarez

Punem fleica de porc, taiata bucati, impreuna cu cuburile de gheata intr-un blender sau robot de bucatarie si tocam totul bine, pana obtinem o pasta fina. Gheata ajuta la mentinerea unei temperaturi scazute in timpul tocarii, ceea ce face carnea mai legata si mai frageda. Transferam pasta de carne intr-un castron si o punem deoparte.

In acelasi blender, tocam ceapa galbena impreuna cu carnea tocata de porc, cateva secunde, pana se omogenizeaza. Adaugam o lingura generoasa din amestecul de condimente bavareze pregatit anterior si amestecam bine. Turnam apa minerala carbogazoasa si continuam sa amestecam energic, pana cand compozitia devine aerata si omogena. Apa carbogazoasa este micul secret care face diferenta — da o textura mai usoara si mai pufosa preparatului final.

Adaugam si fleica tocata pusa deoparte si amestecam totul impreuna, pana cand compozitia devine complet uniforma si lucioasa.

Turnam amestecul in forma unsa cu ulei si il niveam bine cu spatula. Intepam compozitia cu o frigaruie de lemn, astfel incat sa iasa aerul prins inauntru. Si pulveizam suprafata cu putina apa minerala. Cu un cutit, trasam pe suprafata un model incrucisat — asta ajuta la o rumenire uniforma si da un aspect frumos cozonacului.

Coacem 45 de minute la 130°C, dupa care ridicam temperatura la 200°C si mai coacem inca 15 minute, pana cand suprafata devine rumena si usor crocanta. Scoatem cozonacul din cuptor si il lasam sa se racoreasca cel putin 15 minute, dupa care il punem la frigider sa se raceasca complet — aproximativ 3 ore. Rabdarea aceasta merita, pentru ca se taie perfect si gustul se intensifica dupa ce s-a odihnit.

Se serveste taiat felii, pe platouri sau la pranz, alaturi de mustar si muraturi.

Bavarian Meatloaf (Leberkäse)

There are dishes that instantly take you back to a long family lunch on a Sunday, with the smell of a warm oven and a plate waiting patiently on the table. Bavarian meatloaf — or Leberkäse, as the Germans know it — is exactly one of those. It’s not a complicated dish, it doesn’t call for hard-to-find ingredients, but the result is surprisingly elegant: a dense, golden, aromatic slice with a slightly crispy crust and a soft, flavourful interior. It’s the kind of food you make once and then keep coming back to, every time you want something hearty and truly good. The secret of this recipe lies in the Bavarian spice blend — an aromatic mix, prepared separately, that gives the whole dish its character. Once you have that combination ready, the rest comes naturally.

INGREDIENTS (for 4-6 servings)

For the Bavarian spice blend:

  • 1 teaspoon mustard seeds
  • 1 teaspoon caraway seeds
  • ½ teaspoon sea salt with chilli and rosemary
  • ½ teaspoon red pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 20 g sun-dried tomatoes
  • 1 teaspoon garlic flakes
  • 1 pinch ground cayenne pepper (to taste)
  • 1 teaspoon paprika

For the meatloaf:

  • extra virgin olive oil (for greasing the tin)
  • 200 g boneless pork shoulder without rind, cut into 3 cm pieces
  • 80 g ice cubes
  • 30 g yellow onion
  • 300 g minced pork
  • 70 g sparkling mineral water

We start with the Bavarian spice blend, which can be prepared ahead of time and kept in an airtight container. Place the mustard seeds, caraway seeds, rosemary and oregano in a mortar or small blender and grind well until you get a fine, fragrant powder. Add the sea salt and sun-dried tomatoes and continue grinding until everything is smooth. Finally, add the garlic flakes, cayenne pepper and paprika and mix for another minute, until the smell coming from the kitchen is simply irresistible. Set aside.

Preheat the oven to 130°C. Grease a loaf tin of approximately 21 x 7.5 x 5 cm with olive oil and set aside.

Place the pork shoulder pieces together with the ice cubes in a blender or food processor and blitz well until you get a smooth paste. The ice helps keep the temperature low during blending, which makes the meat more cohesive and tender. Transfer the meat paste to a bowl and set aside.

In the same blender, blitz the yellow onion together with the minced pork for a few seconds until combined. Add a generous tablespoon of the Bavarian spice blend prepared earlier and mix well. Pour in the sparkling mineral water and continue mixing energetically until the mixture becomes airy and smooth. Sparkling water is the little secret that makes all the difference — it gives the final dish a lighter, fluffier texture.

Add the blended pork shoulder set aside earlier and mix everything together until the mixture is completely uniform and glossy.

Pour the mixture into the greased tin and level it well with a spatula. Pierce the mixture with a wooden skewer so that any trapped air can escape. Spray the surface with a little sparkling mineral water. With a knife, score a crosshatch pattern on the surface — this helps with even browning and gives the meatloaf a beautiful look.

Bake for 45 minutes at 130°C, then raise the temperature to 200°C and bake for a further 15 minutes, until the surface is golden and slightly crispy. Remove the meatloaf from the oven and let it cool for at least 15 minutes, then place it in the fridge to cool completely — about 3 hours. This patience is worth it, as it slices perfectly and the flavour intensifies once it has rested.

Serve sliced, on a platter or for lunch, alongside your favourite side dish.
