Crispy Fish & Chips

Astazi intram in bucataria englezeasca si ne bucuram de o portie generoasa de fish & chips. Pestele in crusta rumena de bere, cartofii prajiti (in Actifry) si sosul tartar excelent vor fi inspiratia pentru o masa delicioasa.

INGREDIENTE / INGREDIENTS:

(pentru 6 portii / for 6 servings)

Pentru fish & chips

  • 1 kg file peste / 1 kg fish fillet
  • 1/2 cana faina / 1/2 cup flour
  • 1/2 cana amidon / 1/2 cup cornstarch
  • 1 cana bere / 1 cup beer
  • 1/2 lingurita sare / 1/2 teaspoon salt
  • Ulei pentru prajit / Oil for deep frying
  • 1 kg cartofi / 1 kg potatoes

Pentru sosul tartar:

  • 5 linguri maioneza / 5 tablespoons mayonnaise
  • 3 linguri smantana / 3 tablespoons sour cream
  • 1 castravete murat / pickles
  • 1 ceapa mica / 1 small onion
  • 3 capere mari / 3 big cappers
  • 1 lingura patrunjel taiat fin / 1 tablespoon finely chopped parsley
  • 1 lingura suc de lamaie / 1 tablespoon lemon juice
  • Sare / Salt
  • Piper / Pepper

Stergem bucatile de peste cu un servet absorbant si le presaram cu sare. Intr-un bol amestecam faina cu amidonul si putina sare. Trecem pestele prin acest amestec si il lasam pe o farfurie. In faina ramasa turnam cana de bere si amestecam bine. Trecem bucatile de peste prin amestecul de bere si il punem la prajit in ulei incins.

Intre timp, pregatim si cartofii la Actifry, fara adaos de ulei. In cazul in care nu detinem un Actifry, putem sa ii prajim il baie de ulei sau sa ii taiem felii si sa ii coacem in cuptor timp de 20 de minute pe fiecare parte.

Pentru sosul tartar taiem marunt ceapa, castravetele si caperele. Apoi le amestecam cu maioneza, smantana, sucul de lamaie, patrunjelul, sare si piper.

Today we enter in the English kitchen and enjoy a generous portion of fish & chips. Fish in beer crust, french fries (in Actifry) and excellent tartar sauce will be the inspiration for a delicious meal.

Wipe the fish pieces with an absorbent napkin and sprinkle with salt. In a bowl, mix the flour with the cornstarch and salt. Pass the fish through this mixture and leave it on a plate. Pour the beer into the remaining flour and mix well. Pass the fish pieces through the oil mixture and fry it in hot oil.

Meanwhile, prepare the potatoes at Actifry, without additing oil. If we do not have an Actifry, we can fry it in oil bath or cut it into slices and bake it in the oven for 20 minutes on each side.

For the tartar sauce, finely chop the onion, cucumber and capers. Then mix them with mayonnaise, sour cream, lemon juice, parsley, salt and pepper.
