Cu un usor iz italian, reinterpretate cu arome romanesti aceste crostini reprezinta un mic dejun sau un aperitiv delicios. Avand la baza paine crocanta, sosuri delicioase, legume, peste marinat sunt extrem de usor de executat. Recomand de asemenea sa incercati un peste marinat “homemade”.
INGREDIENTE / INGREDIENTS
(pentru 1 portie / for 1 serving)
Pentru crostini:
- 2 felii de paine integrala cu seminte / 2 wholemeal bread slices
- 1 lingura pesto de leurda / 1 tablespoon wild garlic pesto
- 1 lingura crema de branza / 1 tablespoon cream cheese
- 2 bucati baby hering marinat / 2 pieces marinated herring
- Felii de ceapa rosie / Red onion slices
- 1/2 bucata buratta afumata / 1/2 pieces smoked buratta
- 2 bucati rosii uscate / 2 pieces dried tomatoes
- Masline verzi / Green olives
- Capere / Cappers
- Ulei de masline / Olive oil
- Fulgi de chilli / Chilli flakes
Pentru pestele marinat
- 1 kg baby hering / 1 kg baby herring
- 300 ml otet / 300 ml vinegar
- 1 lingurita sare / 1 teaspoon salt
- 200 ml ulei de masline / 200 ml olive oil
- 8 catei de usturoi / 8 garlic cloves
- 1 ardei iute / 1 hot pepper
- Patrunjel / Parsley
Pestele marinat il pregatim cu cateva zile inainte. Curatam si spalam bine pestele. Il presaram cu sare. Intr-un ibric incalzim otetul cu apa si turnam peste peste. Lasam la rece timp de 10 ore apoi il aranjam in borcane unse cu ulei de masline, alternand cu usturoi, ardei iute si patrunjel. Turnam deasupra ulei de masline si lasam la marinat minim o zi. Pentru crostini, prajim feliile de paine. O felie o acoperim cu pesto de leurda (reteta aici), felii de buratta afumata si rosii uscate. A doua felie o ungem cu crema de branza si asezam deasupra peste marinat, ceapa rosie, capere si masline.

Crostini & Marinated Fish
With a slight Italian scent, reinterpreted with Romanian flavors, these crostini represent a delicious breakfast or appetizer. Based on crispy bread, delicious sauces, vegetables, marinated fish are extremely easy to execute. I also recommend starting a „homemade” marinated fish.
Prepare the marinated fish a few days before. Clean and wash the fish well. Sprinkle with salt. In a kettle, heat the vinegar with water and pour over the fish. Let it cool for 10 hours then arrange it in jars greased with olive oil, alternating with garlic, hot peppers and parsley. Pour olive oil on top and leave to marinate for at least a day. For crostini, toast the slices of bread. Cover a slice with wild garlic pesto (recipe here), slices of smoked buratta and dried tomatoes. Grease the second slice with cream cheese and place on top of marinated fish, red onions, capers and olives.
