De cate ori ati trecut pe langa micutele restaurante cu Doner Kebab si v-ati uitat la acele carnuri uriase care se roteau, intrebandu-va ce fel de carne contin, ce condimente le fac asa gustoase sau cum se prepara? Doner Kebab in varianta “homemade” poate fi facuta cu carne de pui, curcan, vita, miel sau amestec. Desi aceasta versiune este o miniatura a celor din restaurante si metoda de gatit a fost adaptata pentru bucatarie, rezultatul final va va uimi cu siguranta!

INGREDIENTE / INGREDIENTS

  • 500 grame carne tocata dupa preferinta / 500 grams favorite minced meat
  • 100 grame bacon / 100 grams bacon
  • 1 ceapa / 1 onion
  • 4 catei de usturoi / 4 garlic cloves
  • 1 lingura ulei de masline / 1 tablespoon olive oil
  • 1/2 lingurita oregano / 1/2 teaspoon oregano
  • 1/2 lingurita chimen / 1/2 teaspon caraway
  • 1/4 lingurita pudra chilli / 1/4 teaspoon chilli powder
  • 1 varf de lingurita scortisoara / 1 pinch of cinnamon
  • 1/2 lingurita pudra de ceapa / 1/2 teaspoon onion powder
  • 1/2 lingurita pudra de usturoi / 1/2 teaspoon garlic powder
  • 1 lingurita sare / 1 teaspoon salt

Pentru sosul de iaurt / For yogurt sauce

  • 3/4 cana iaurt grecesc / 3/4 cup greek yogurt
  • 1/4 cana smantana / 1/4 cup sour cream
  • 3 lingurite tahini / 3 teaspoons tahini
  • 4 catei de usturoi / 4 garlic cloves
  • 10 frunze de menta / 10 mint leaves
  • 2 linguri suc de lamaie / 2 tablespoons lemon juice
  • 1 lingura ulei de masline / 1 tablespoon olive oil
  • 1/4 lingurita sumak / 1/4 teaspoon sumak
  • 1/4 lingurita sare / 1/4 teaspoon salt
Doner Kebab

Pentru doner kebab, punem carnea tocata intr-un bol si o amestecam cu sarea, chimenul, pudra de ceapa, pudra de usturoi, chilli, scortisoara si oregano. Lasam la marinat la rece pentru minim o ora, ideal pentru cateva ore, peste noapte.

In bolul blenderului punem bacon-ul taiat marunt, ceapa si usturoiul si mixam pana obtinem o pasta pe care o amestecam cu carnea tocata marinata.

Rasturnam amestecul pe o folie de aluminiu si il rulam sub forma de cilindru. Strangem bine capetele foliei de aluminiu si trecem 2 bete de frigarui pe lungimea cilindrului. Asezam betele de frigarui pe marginea unei tavi de cuptor acoperita cu folie, astfel incat carnea sa nu atinga tava. Introducem in cuptorul incins la 170 grade Celsius pentru 90 de minute. La jumatatea timpului intoarcem cilindrul de carne. La expirarea timpului, inlaturam folia si dam din nou la cuptor, la 200 de grade Celsius pentru inca 10 minute pe fiecare parte pana cand este frumos rumenita.

Scoatem carnea din cuptor si o taiem in fasii foarte subtiri. Incingem intr-o tigaie, o lingura de ulei de masline si rumenim feliile de carne.

Intre timp, pregatim sosul de iaurt. Mixam in blender toate ingredientele si pastram la rece.

Servim doner kebab alaturi de sos de iaurt, hummus, lipii, cartofi prajiti, castraveti, ardei iuti murati si legume proaspete.

Doner Kebab

How many times have you passed by the Doner Kebab restaurants and looked at those huge pieces of meat that were rotating, wondering what kind of meat they contain, what spices make them so tasty or how they are prepared? Doner Kebab in the „homemade” version can be made with chicken, turkey, beef, lamb or a mixture. Although this version is a miniature of those in restaurants and the cooking method has been adapted for the kitchen, the final result will surely amaze you!

For doner kebab, put the minced meat in a bowl and mix it with salt, caraway, onion powder, garlic powder, chilli, cinnamon and oregano. Leave to marinate in the cold for at least an hour, ideally for a few hours, overnight.

In the blender bowl, put the finely chopped bacon, onion and garlic and mix until you get a paste that you mix with the marinated minced meat.

Pour the mixture onto an aluminum foil and roll it into a cylinder. Tightly tighten the ends of the aluminum foil and pass 2 skewers along the length of the cylinder. Place the skewers on the edge of an oven tray covered with foil, so that the meat does not touch the bottim of the tray. Place in the oven heated to 170 degrees Celsius for 90 minutes. Halfway through the time, turn the meat cylinder over. When the time is up, remove the foil and put it back in the oven at 200 degrees Celsius for another 10 minutes on each side until it is nicely browned.

Take the meat out of the oven and cut it into very thin strips. Heat a tablespoon of olive oil in a pan and brown the meat slices.

In the meantime, prepare the yogurt sauce. Mix all the ingredients in a blender and keep it cold.

Serve doner kebab with yogurt sauce, hummus, pita bread, fried potatoes, pickled cucumbers and hot peppers and fresh vegetables.
