- 1 lingura rasa amidon
- 1 catel de usturoi zdrobit
- sare
Pentru orez prajit:
- 150 grame orez jasmin fiert si racit
- 1 morcov taiat cubulete mici
- 100 grame mazare
- 3 fire ceapa verde
- 2 catei de usturoi zdrobiti
- 3 oua batute
- 3 linguri sos de soia
- 1 lingura Lao Gan Ma chilli cu soia fermentata
- 1 lingura ulei vegetal
- 1 lingura ulei de susan
Pentru servire:
- ceapa verde inele

Chicken Fried Rice
Fried rice is one of the most well-known and loved dishes in Asian cuisine — and for good reason! Quick, satisfying, full of flavour and perfect for using up leftover rice from the day before, Chicken Fried Rice is the recipe you make once and after which you never order fried rice from outside again! The secret to a truly good fried rice lies in two essential details — cold rice cooked the day before, which fries perfectly without sticking, and high heat that seals in the flavours and gives every grain that slightly crispy and golden texture characteristic of Chinese cuisine. The chicken marinated with soy sauce, rice vinegar and cornstarch becomes incredibly tender and juicy, while the combination of Lao Gan Ma, soy sauce and sesame oil adds a depth of flavour you simply cannot achieve any other way! Chicken fried rice is exactly that friendly, versatile and absolutely delicious recipe you make from a handful of ingredients and which brings everyone to the table.
INGREDIENTS (for 4 servings)
For the marinated chicken:
- 400 grams chicken breast cut into small cubes
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 level tablespoon cornstarch
- 1 garlic clove crushed
- salt
For the fried rice:
- 150 grams cooked and cooled jasmine rice
- 1 carrot cut into small cubes
- 100 grams peas
- 3 spring onions
- 2 garlic cloves crushed
- 3 eggs beaten
- 3 tablespoons soy sauce
- 1 tablespoon Lao Gan Ma chilli with fermented soy
- 1 tablespoon vegetable oil
- 1 tablespoon sesame oil
For serving:
- spring onion rings
- sesame seeds
We start with the chicken marinade. Place the chicken breast cubes in a bowl and add the soy sauce, rice vinegar, cornstarch, crushed garlic and salt. Mix well and leave for a few minutes while we prepare the remaining ingredients. The cornstarch is the secret that gives the chicken a velvety and juicy texture when frying.
Heat one tablespoon of vegetable oil in a large pan or wok over high heat. Add the marinated chicken and fry over high heat until golden and well browned on all sides. Remove to a bowl and set aside.
In the same pan add another tablespoon of vegetable oil and add the spring onions cut into rounds and the crushed garlic. Stir-fry for a few seconds, then add the diced carrot and peas and stir-fry over high heat for 5 minutes, stirring constantly.
Push the vegetables to one half of the pan and pour the 3 beaten eggs onto the other half. Fry like an omelette, stirring gently, then fold together with the vegetables.
Add the cold rice. Rice cooked the day before works best because the grains are separate and fry perfectly. Pour in the soy sauce and Lao Gan Ma and stir energetically over high heat so that every grain is evenly coated in the sauce. Add the fried chicken and cook everything together over high heat for 3-4 minutes, stirring constantly.
Finish with the tablespoon of sesame oil, scatter spring onion rings and sesame seeds on top and serve immediately. Aromatic, succulent and absolutely unforgettable!
