Caracatita prefiearta, taiata marunt si incorporata in salata clasica de boeuf, adauga o textura fina si un gust delicat de mare care transforma preparatul traditional intr-unul cu totul nou si fascinant. Iar tentaculul prajit doua minute in ulei de masline si asezat deasupra la servire? Detaliul care transforma o salata simpla intr-un preparat de restaurant! Boia dulce si iute, otetul de la muraturi si maioneza cremoasa leaga toate ingredientele intr-o salata echilibrata, aromata si surprinzatoare, clasica in esenta dar cu un twist care opreste orice conversatie la masa. INGREDIENTE (pentru 4 portii)

Pentru salata:

  • 4 cartofi fierti
  • 2 morcovi fierti
  • 2 castraveti murati
  • 250 grame tentacule de caracatita prefierte
  • 1 lingura patrunjel verde tocat
  • 1½ lingurita boia dulce KOK
  • ¼ lingurita boia iute KOK
  • 3 linguri maioneza
  • 2 linguri otet de la castraveti
  • 2 linguri ulei de masline
  • sare dupa gust

Incepem cu legumele — cartofii si morcovii fierti si bine raciti se taie in cubulete mici. Castravetii murati se taie la fel de marunt — otetul lor va da acelasi gust acrisor caracteristic salatei de boeuf clasice. Caracatita se taie marunt, pastrand un tentacul intreg pentru servire — acesta va fi vedeta farfuriei!

Punem toate ingredientele taiate intr-un bol incapator. Adaugam boia dulce si iute, patrunjelul verde tocat marunt si maioneza. Amestecam bine, apoi adaugam otetul de la castraveti si sarea. Gustam si ajustam — daca simtim nevoia de mai multa aciditate, putem adauga si putina zeama de lamaie dupa gust. Amestecam din nou si lasam salata la frigider cateva ore — racirea este esentiala pentru ca aromele sa se lege perfect!

Inainte de servire, incalzim o tigaie cu o lingura de ulei de masline la foc mare. Adaugam tentaculul rezervat si il prajim 2 minute, pana capata o culoare aurie si usor crocanta la exterior. Il asezam deasupra salatei si turnam uleiul ramas din tigaie direct pe farfuria de servire — adauga luciu si o aroma subtila de mare! Presaram cu boia dulce si servim imediat!

Boeuf Salad 3.0 — with Octopus!

Not beef, not chicken — boeuf salad with octopus! There is a debate that has divided Romania into two irreconcilable camps for decades — boeuf salad with beef or with chicken? Every family has their own recipe, every grandmother swears by their version and neither side ever gives in. Well, we decided not to take sides. When two argue, the third one wins — and the third one is octopus! Because why choose between beef and chicken when you can surprise everyone with a version that looks like no boeuf salad you have ever tried before? Pre-cooked octopus, finely chopped and folded into the classic boeuf salad, adds a delicate texture and a subtle taste of the sea that transforms the traditional dish into something entirely new and fascinating. And the tentacle fried for two minutes in olive oil and placed on top at serving? The detail that transforms a simple salad into a restaurant-worthy dish! Sweet and spicy paprika, pickle brine and creamy mayonnaise bind all the ingredients into a balanced, aromatic and surprising salad — classic at heart but with a twist that stops every conversation at the table. Served cold, after a few hours in the fridge, it is exactly the kind of dish you bring to a festive meal and after which nobody talks about the beef versus chicken debate anymore! INGREDIENTS (for 4 servings)

For the salad:

  • 4 boiled potatoes
  • 2 boiled carrots
  • 2 pickled cucumbers
  • 250 grams pre-cooked octopus tentacles
  • 1 tablespoon finely chopped fresh parsley
  • 1½ teaspoons KOK sweet paprika
  • ¼ teaspoon KOK hot paprika
  • 3 tablespoons mayonnaise
  • 2 tablespoons pickle brine
  • 2 tablespoons olive oil
  • salt to taste

We start with the vegetables — the boiled and well-cooled potatoes and carrots are cut into small, uniform cubes. The pickled cucumbers are chopped just as finely — their brine will give the same tangy flavour characteristic of the classic boeuf salad. The octopus is chopped finely, keeping one whole tentacle aside for serving — this will be the star of the plate!

Place all the chopped ingredients in a large bowl. Add the sweet and hot paprika, the finely chopped fresh parsley and the mayonnaise. Mix well, then add the pickle brine and salt. Taste and adjust — if you feel the need for more acidity, you can also add a little lemon juice to taste. Mix again and leave the salad in the fridge for several hours — chilling is essential for the flavours to come together perfectly!

Before serving, heat a pan with one tablespoon of olive oil over high heat. Add the reserved tentacle and fry for 2 minutes, until it turns golden and slightly crispy on the outside. Place it on top of the salad and pour the remaining oil from the pan directly onto the serving plate — it adds shine and a subtle aroma of the sea! Scatter sweet paprika on top and serve immediately!
