INGREDIENTE (pentru 3 portii)
Pentru steak:
- 1 steak de aproximativ 500 grame (ideal rib eye maturat)
- sare
Pentru fettuccine Alfredo:
- 250 grame fettuccine La Molisana
- 100 grame baby spanac
- 150 grame rosii cherry
- 100 grame parmezan ras
- 100 grame unt
- 200 ml smantana dulce
- sare

Primul pas este pregatirea steak-ului — si acest pas face toata diferenta. Stergem bine carnea cu servetele absorbante si o presaram generos cu sare pe ambele parti. O asezam pe un fund de lemn si o lasam la temperatura camerei timp de o ora — acest pas relaxeaza fibrele si asigura o gatire uniforma. Inainte de a o pune la tigaie, o stergem din nou cu servetele, pentru a absorbi toata umezeala de la suprafata.
Incingem bine o tigaie la foc mediu-mare si prajim steak-ul cate 4 minute pe fiecare parte, fara sa il miscam sau sa il apasam. Ideal este sa folosim un termometru de carne — cand temperatura interioara atinge 60 grade Celsius avem un steak mediu gatit, roz si suculent in interior. Scoatem steak-ul pe o farfurie si il acoperim cu folie de aluminiu, lasandu-l sa se relaxeze in timp ce pregatim pastele. Acest pas este esential — carnea isi redistribuie sucurile si devine si mai frageda la taiere.

Fierbem fettuccinele La Molisana in apa cu sare conform indicatiilor de pe ambalaj, pana devin al dente. Pastram 200 ml din apa in care au fiert pastele — este secretul unui sos Alfredo perfect legat.
Intr-o cratita larga punem untul, smantana dulce, apa de la paste si un praf de sare. Lasam pe foc mediu pana ajunge la punctul de fierbere, apoi adaugam rosiile cherry taiate in jumatate si baby spanacul. Gatim 5 minute, pana spanacul se inmoaie si rosiile incep sa se caramelizeze usor. Adaugam 75 grame de parmezan ras si amestecam energic pana se incorporeaza complet in sos. Adaugam fettuccinele fierte si mai gatim 3 minute, amestecand continuu, pana sosul devine consistent si invaluie perfect fiecare fir de paste.

Punem pastele pe farfurie, taiem steak-ul in felii generoase si le asezam deasupra. Presaram cu restul de parmezan ras si servim imediat, cu multa pofta! 🥩🍝

Steak Fettuccine Alfredo

A matured rib eye, fried to perfection with a golden crust and a pink, juicy interior, resting on a bed of La Molisana fettuccine wrapped in a creamy sauce of butter, cream and parmesan — it is the kind of dish that transforms any ordinary dinner into a restaurant experience. It is not a complicated recipe — it is a recipe that asks for attention and respect for the ingredients. The steak needs time to rest at room temperature before frying, the Alfredo sauce needs patience to come together beautifully, and La Molisana fettuccine brings that perfect texture that holds the sauce exactly as it should. Every step matters and every step is worth it! The result? A plate that looks spectacular, smells irresistible and has a taste you won’t forget easily. Perfect for a romantic dinner, a meal with friends or simply for those evenings when you want to treat yourself to something truly special! 🥩🍝
INGREDIENTS (for 3 servings)
For the steak:
- 1 steak of approximately 500 grams (ideally matured rib eye)
- salt
For the Fettuccine Alfredo:
- 250 grams La Molisana fettuccine
- 100 grams baby spinach
- 150 grams cherry tomatoes
- 100 grams grated parmesan
- 100 grams butter
- 200 ml heavy cream
- salt
The first step is preparing the steak — and this step makes all the difference. Pat the meat dry with paper towels and season generously with salt on both sides. Place it on a wooden board and leave it at room temperature for one hour — this step relaxes the fibres and ensures even cooking. Just before placing it in the pan, pat it dry again to absorb all the moisture from the surface.
Heat a pan well over medium-high heat and fry the steak for 4 minutes on each side, without moving or pressing it. Ideally use a meat thermometer — when the internal temperature reaches 60°C we have a medium cooked steak, pink and juicy on the inside. Remove the steak onto a plate and cover with aluminium foil, leaving it to rest while we prepare the pasta. This step is essential — the meat redistributes its juices and becomes even more tender when sliced.
Cook the La Molisana fettuccine in salted water according to the instructions on the packet, until al dente. Reserve 200 ml of the pasta cooking water — this is the secret to a perfectly bound Alfredo sauce.
In a wide saucepan, place the butter, heavy cream, pasta water and a pinch of salt. Heat over medium heat until it reaches boiling point, then add the cherry tomatoes cut in half and the baby spinach. Cook for 5 minutes, until the spinach softens and the tomatoes begin to caramelise slightly. Add 75 grams of grated parmesan and stir vigorously until fully incorporated into the sauce. Add the cooked fettuccine and cook for a further 3 minutes, stirring continuously, until the sauce becomes thick and coats every strand of pasta perfectly.
Plate the pasta, slice the steak into generous pieces and arrange on top. Sprinkle with the remaining grated parmesan and serve immediately, with great appetite! 🥩🍝
