Lipsa de inspiratie pentru un pranz sau o cina?

Astazi incercam o tarta cu aluat integral executat acasa, umpluta cu un amestec delicios de carne si ciuperci.

INGREDIENTE / INGREDIENTS:

(pentru 4 portii / for 4 servings)

  • 200 grame faina / 200 grams flour
  • 200 grame branza de vaci / 200 grams cottage cheese
  • 200 grame unt / 200 grams butter
  • 500 grame carne tocata / 500 grams minced meat
  • 300 grame ciuperci / 300 grams mushrooms
  • 1 ceapa / 1 onion
  • 3 oua + 1 galbenus / 3 eggs + 1 egg yolk
  • 2 linguri smantana dulce sau lapte / 2 tablespoon double cream or milk
  • 2 linguri ulei / 2 tablespoon of oil
  • Marar / Dill
  • Patrunjel / Parsley
  • Sare / Salt
  • Boia de ardei / Paprika
  • Cimbru / Thyme
  • Piper / Pepper
  • 2 linguri de gris / 2 tablespoon of semolina

Pentru aluat, taiem untul rece in cubulete, adaugam branza de vaci, faina si 1/2 lingurita de sare. Amestecam si obtinem un aluat lipicios pe care il invelim in folie alimentara si il lasam la frigider 3 ore.

Tip: eu am folosit faina integrala. Insa puteti opta pentru orice tip de faina sau combinatii de faina integrala cu faina alba.

Intre timp pregatim amestecul de carne cu ciuperci. Taiem ceapa cubulete mici si o calim in 2 linguri de ulei. Peste ceapa usor calita, adaugam carnea tocata de curcan (puteti alege porc, vita, pui sau combinatii ale acestora) si calim pana ce carnea isi schimba culoarea. Apoi adaugam ciupercile taiate marunt si trase la tigaie cu foarte putin ulei. Adaugam condimentele si 100 ml apa. Lasam sa fiarba timp de 20 minute amestecand ocazional. Tragem deoparte si lasam sa se raceasca. Apoi adaugam verdeturile tocate marunt si cele 3 oua.

Impartim aluatul in 2 foi. Intindem fiecare foaie pe blatul de lucru infainat sub forma de cerc de 25 cm. Asezam foaia intr-un vas de sticla uns cu putin ulei se masline. Ridicam excesul de aluat pe marginile tavii si intepam foaia din loc in loc cu ajutorul unei furculite. Dam la copt timp de 15 minute in cuptorul incins la 180 grade Celsius. Dupa cele 15 minute, scoatem tava din cuptor, presaram 1 lingura de gris si turnam umplutura de carne si ciuperci. Presaram a doua lingura de gris si asezam a doua foaie. Intepam foaia din loc in loc si cu ajutorul unei pensule ungem foaia cu galbenusul de ou batut cu smantana dulce sau lapte. Coacem timp de 45 de minute la 180 grade Celsius.

Lasam sa se raceasca 15-20 de minute si apoi servim cu ketchup de casa si salata verde.

Tips: I used wholemeal flour. But you can opt for any type of flour or combinations of wholemeal flour with white flour.

Meanwhile, prepare the meat mixture with mushrooms. Cut the onion into small cubes and heat it in 2 tablespoons of oil. Over the onion, add the minced turkey minced (or you can choose pork, beef, chicken) and sauté until the meat changes color. Then add the finely chopped mushrooms fried before with a small quantity of oil. Add the spices and 100 ml of water. Let it boil for 20 minutes, stirring occasionally. Set aside and let cool. Then add the finely chopped greens and the 3 eggs.

Divide the dough into 2 sheets. We spread each sheet on the floured table in the form of a 25 cm circle. Place the sheet in a glass bowl greased with a little olive oil. Lift the excess dough on the edges of the tray. Bake for 15 minutes in the oven heated to 180 degrees Celsius. After 15 minutes, take the tray out of the oven, sprinkle 1 tablespoon of semolina and pour the meat and mushrooms filling. Sprinkle the second tablespoon of semolina and place the second sheet. Prick the sheet from place to place and use a brush to grease the sheet with beaten egg yolk with sweet cream or milk. Bake for 45 minutes at 180 degrees Celsius.

Let cool for 15-20 minutes and then serve with homemade ketchup and lettuce.
