Daca n-ai incercat pana acum varza rosie calita, e momentul sa-ti faci pofta si sa-ti pui sortul! Preparatul asta simplu, dar plin de personalitate, e genul de mancare care miroase a casa, a bunici si a zile lenese de toamna. Cu ceapa calita cat sa-ti lase gura apa, un mar razuit pe furis (da, ai citit bine!), un strop de otet si o pasta de ardei care da lovitura finala de gust, varza rosie calita devine din garnitura timida un fel principal in toata regula – mai ales in zilele de post. INGREDIENTE (pentru 4 portii)
- 350 grame varza rosie
- 1 mar
- 75 grame ceapa alba
- 15 grame unt sau ulei
- 25 ml otet de cidru de mere
- 15 grame zahar brun
- 50 ml apa
- 1/4 lingurita sare
- 1 praf de piper negru
- 20 grame pasta de ardei picanta

Se toaca fin ceapa si se caleste in unt sau, pentru varianta de post, in ulei vegetal, timp de aproximativ trei minute, amestecand continuu pentru a nu se arde si pentru a-si elibera aroma.

Se adauga apoi varza rosie taiata subtire, impreuna cu zaharul, otetul, apa, marul curatat de coaja si dat pe razatoare, sare si piper dupa gust. Preparatul se lasa la foc mic pentru circa 40 de minute, timp in care se amesteca din cand in cand, astfel incat aromele sa se intrepatrunda, iar varza sa devina frageda.
La final, se incorporeaza pasta de ardei, iar preparatul se mai lasa pe foc inca doua minute, pentru ca gusturile sa se echilibreze si sa capete o nota finala usor picanta si aromata.

Varza rosie calita se serveste fierbinte, alaturi de ardei iute, fiind o alegere inspirata atat ca garnitura, cat si ca fel principal in zilele de post.

- 350 grams red cabbage
- 1 apple
- 75 grams white onion
- 15 grams butter or oil (for vegan version)
- 25 ml apple cider vinegar
- 15 grams brown sugar
- 50 ml water
- 1/4 tsp salt
- A pinch of black pepper
- 20 grams spicy pepper paste
Finely chop the onion and sauté it in butter—or vegetable oil if you’re going for the vegan version—for about three minutes, stirring constantly to prevent burning and bring out its full flavor.
Next, add the thinly sliced red cabbage, along with the brown sugar, vinegar, water, peeled and grated apple, salt, and pepper to taste. Let everything cook on low heat for about 40 minutes, stirring occasionally to ensure all the flavors blend together and the cabbage becomes tender.
In the final step, stir in the spicy pepper paste and let it cook for another two minutes so the flavors can fully develop and that gentle kick can come through.
