INGREDIENTE (pentru 2 portii)


• 480 mililitri vin rosu Pinot Noir
• 150 mililitri suc de rodie
• 60 grame zahar
• 15 grame ghimbir curatat si feliat
• 1 anason stelat
• 1 lingurita esenta de vanilie
• 1 para curatata, taiata in jumatati si fara samburi
• 85 grame branza Roquefort
• 2 lingurite fistic tocat

Intr-o cratita incapatoare, adaugam vinul rosu, sucul de rodie, zaharul, ghimbirul, vanilia si anasonul stelat. Punem cratita pe foc mediu si lasam amestecul sa ajunga usor la punctul de fierbere, amestecand din cand in cand pentru a dizolva zaharul.

Gatim perele la abur sau le adaugam in lichidul aromat si reducem focul, astfel incat sa fiarba incet. Lasam perele sa se gateasca aproximativ 20 de minute, intorcandu-le usor din cand in cand, pana devin fragede, dar isi pastreaza forma. Cand sunt gata, le scoatem cu grija si le asezam intr-un recipient adanc.

Strecuram lichidul printr-o sita fina peste pere, apoi le lasam sa se odihneasca la temperatura camerei aproximativ o ora, pentru a absorbi aromele bogate ale vinului si condimentelor.

Separat, turnam lichidul ramas inapoi in cratita si il fierbem la foc mic, fara capac, timp de aproximativ 35-40 de minute, pana cand scade si capata consistenta unui sirop gros si lucios. Amestecam ocazional pentru a preveni lipirea.

Dupa ce reductia este gata, o turnam peste pere si lasam totul la racit, apoi dam la frigider aproximativ o ora, pana desertul devine bine racit si aromele se intensifica.

Pentru servire, asezam jumatatile de para pe farfurii, apoi presaram deasupra branza Roquefort faramitata si fisticul tocat marunt. Combinatia dintre dulce, acrisor si sarat este absolut irezistibila.

INGREDIENTS (for 2 servings)

• 480 milliliters Pinot Noir red wine
• 150 milliliters pomegranate juice
• 60 grams sugar
• 15 grams ginger, peeled and sliced
• 1 star anise
• 1 teaspoon vanilla extract
• 1 pear, peeled, halved and cored
• 85 grams Roquefort cheese
• 2 teaspoons chopped pistachios

In a large saucepan, add the red wine, pomegranate juice, sugar, ginger, vanilla and star anise. Place the saucepan over medium heat and allow the mixture to gently reach a simmer, stirring occasionally to dissolve the sugar.
You can steam the pears or add them directly into the aromatic liquid, then reduce the heat so it simmers slowly. Let the pears cook for about 20 minutes, turning them gently from time to time, until they become tender while still holding their shape. Once ready, carefully remove them and place them in a deep container.
Strain the liquid through a fine sieve over the pears, then let them rest at room temperature for about one hour, allowing them to absorb the rich aromas of the wine and spices.
Separately, pour the remaining liquid back into the saucepan and simmer over low heat, uncovered, for about 35 to 40 minutes, until it reduces and becomes a thick, glossy syrup. Stir occasionally to prevent sticking.
Once the reduction is ready, pour it over the pears and let everything cool, then refrigerate for about one hour, until the dessert is well chilled and the flavors intensify.
For serving, place the pear halves on plates, then sprinkle the crumbled Roquefort cheese and finely chopped pistachios on top. The combination of sweet, tangy and salty is absolutely irresistible.
