O combinatie clasica, dar mereu actuala, in care ingredientele proaspete se intalnesc intr-un dans delicios de texturi si arome. Este o reteta usoara, rapida si incredibil de gustoasa, perfecta pentru zilele in care vrei ceva satios, dar fara batai de cap. Cu cartofi fragezi, fasole verde usor crocanta, ton savuros si oua fierte fix cat trebuie, aceasta salata aduce pe masa o explozie de gusturi. Este ideala pentru un pranz lejer sau o cina relaxata, iar dressingul simplu cu mustar si lamaie leaga totul intr-un mod minunat. Daca esti in cautarea unei retete cu legume si proteine, simpla si echilibrata, ai nimerit exact unde trebuie.

INGREDIENTE (pentru 4 portii)
• 4 cartofi
• 1 ceapa rosie mare
• 1 legatura ceapa verde
• 100 grame masline
• 150 grame fasole verde
• 4 oua
• 1 conserva de ton de aproximativ 250 grame
• jumatate de salata verde
• sucul de la jumatate de lamaie
• 1 lingura mustar
• 3 linguri ulei de masline
• sare dupa gust

Incepem prin a spala bine cartofii si a-i fierbe in coaja, intr-o oala cu apa si o lingura de sare. Ii lasam la fiert pana cand furculita intra usor in ei, semn ca sunt fragezi si perfect gatiti. Dupa ce sunt gata, ii lasam sa se raceasca suficient cat sa ii putem curata fara graba, apoi ii taiem in cuburi potrivite, nici prea mici, nici prea mari, pentru a pastra textura.
Intre timp, incalzim o tigaie cu putin ulei de masline si adaugam fasolea verde. O gatim rapid, doar cateva minute, astfel incat sa ramana usor crocanta si sa isi pastreze culoarea vie. Daca folosesti fasole congelata, o poti adauga direct in tigaie, fara decongelare prealabila. Secretul este sa nu o gatesti excesiv.

Taiem ceapa rosie in fasii subtiri, stil julien, iar ceapa verde o feliem in inele fine. Intr-un bol mare, adunam aceste ingrediente si adaugam cartofii cuburi, maslinele si salata verde rupta in bucati potrivite. Amestecul incepe deja sa arate apetisant, dar magia abia urmeaza.
Pentru dressing, intr-un bol mic, combinam mustarul cu sucul de lamaie si un praf de sare. Incepem sa amestecam si turnam treptat uleiul de masline, pana obtinem o emulsie fina si cremoasa. Turnam dressingul peste salata si amestecam usor, de preferat cu mainile, pentru a nu zdrobi cartofii.

Transferam salata pe un platou mare, apoi adaugam deasupra tonul bine scurs, fasolea verde si ouale fierte, taiate in jumatati. Aspectul final este unul rustic si elegant in acelasi timp, iar aromele sunt pur si simplu irezistibile.

INGREDIENTS (for 4 servings)
• 4 potatoes
• 1 large red onion
• 1 bunch green onions
• 100 grams olives
• 150 grams green beans
• 4 eggs
• 1 can of tuna of approximately 250 grams
• half a head of lettuce
• juice from half a lemon
• 1 tablespoon mustard
• 3 tablespoons olive oil
• salt to taste
We start by washing the potatoes well and boiling them in their skins, in a pot with water and a tablespoon of salt. We let them cook until a fork goes in easily, a sign that they are tender and perfectly cooked. Once ready, we let them cool enough so we can peel them without rushing, then cut them into medium cubes, not too small and not too large, to keep their texture.
Meanwhile, we heat a pan with a little olive oil and add the green beans. We cook them quickly, just a few minutes, so they remain slightly crunchy and keep their vibrant color. If you use frozen beans, you can add them directly to the pan without thawing. The secret is not to overcook them.
We slice the red onion into thin julienne strips, and the green onions into fine rings. In a large bowl, we gather these ingredients and add the cubed potatoes, olives and lettuce torn into suitable pieces. The mixture already starts to look appetizing, but the magic is just beginning.
For the dressing, in a small bowl, we combine the mustard with the lemon juice and a pinch of salt. We start mixing and gradually pour in the olive oil until we obtain a smooth and creamy emulsion. We pour the dressing over the salad and mix gently, preferably with our hands, so we do not crush the potatoes.
We transfer the salad onto a large platter, then add on top the well drained tuna, the green beans and the boiled eggs cut in halves. The final look is both rustic and elegant, and the aromas are simply irresistible.
