INGREDIENTE (pentru 2 portii)

Pentru coaste:

  • 1 kg coaste de porc
  • 200 ml bere blonda
  • 3 catei de usturoi
  • 1 lingurita cimbru
  • 1 lingurita paprika
  • sare

Pentru cartofi aromati:

  • 5-6 cartofi mari
  • 1 lingura ulei
  • 2 catei de usturoi
  • 2 fire ceapa verde
  • 3-4 fire marar proaspat
  • sare

Incepem cu coastele — le taiem in bucati mai mici si le presaram generos cu sare, cimbru si boia dulce. Amestecam bine astfel incat fiecare bucata sa fie acoperita uniform cu condimente. Acoperim si lasam la marinat la frigider cateva ore — cu cat mai mult, cu atat mai bine. Cu aproximativ o ora inainte de preparare, scoatem coastele din frigider pentru a ajunge la temperatura camerei.

Asezam coastele intr-o tava incapatoare si le stropim cu cele 200 ml de bere blonda. Umezim o hartie de copt sub jet de apa, o stoarcem usor si o asezam direct peste coaste, acoperindu-le bine. Aceasta tehnica simpla mentine umezeala in interiorul tavii si face carnea incredibil de frageda. Introducem tava in cuptorul preincalzit la 150°C pentru 2,5 ore.

Cand scoatem coastele din cuptor, carnea cade literalmente de pe os — acesta este semnul ca am facut totul perfect. Le stropim imediat cu un mujdei simplu din 3 catei de usturoi zdrobiti, amestecati cu putina apa si sare. Usturoiul patrunde in carnea calda si parfumeaza totul divin.

In timp ce coastele sunt la cuptor, pregatim cartofii. Ii curatam, ii spalam bine si ii taiem in rondele groase de aproximativ 3 cm. Ii lasam cateva minute in apa rece pentru a elimina excesul de amidon, apoi ii clatim bine si ii scurgem. Intr-o cratita incapatoare punem uleiul si cartofii, presaram cu sare, acoperim cu capac si lasam sa se gateasca la foc mic spre mediu timp de aproximativ 40-45 de minute, amestecand din cand in cand, pana cand sunt bine gatiti si usor rumeniti.

La final, pregatim mujdeiul pentru cartofi — zdrobim 2 catei de usturoi cu un praf de sare, adaugam ceapa verde taiata rondele si mararul proaspat tocat marunt. Amestecam si turnam peste cartofii calzi — parfumul care se ridica din cratita este pur si simplu irezistibil! 🌿

For the ribs:

  • 1 kg pork ribs
  • 200 ml blonde beer
  • 3 garlic cloves
  • 1 tsp dried thyme
  • 1 tsp paprika
  • Salt

For the aromatic potatoes:

  • 5–6 large potatoes
  • 1 tbsp oil
  • 2 garlic cloves
  • 2 green onions
  • 3–4 sprigs fresh dill
  • Salt

We start with the ribs — cut them into smaller pieces and generously season them with salt, thyme, and sweet paprika. Mix well so every piece is evenly coated with the spices. Cover and let them marinate in the fridge for a few hours — the longer, the better. About one hour before cooking, take the ribs out of the fridge so they can reach room temperature.

Place the ribs into a large baking tray and pour over the 200 ml of blonde beer. Wet a sheet of baking paper under running water, gently squeeze out the excess water, and place it directly over the ribs, covering them well. This simple technique helps keep the moisture inside the tray and makes the meat incredibly tender. Transfer the tray to the preheated oven at 150°C (300°F) for 2.5 hours.

When you remove the ribs from the oven, the meat should literally fall off the bone — the perfect sign that everything was done right. Immediately drizzle them with a simple garlic sauce made from 3 crushed garlic cloves mixed with a little water and salt. The garlic seeps into the hot meat and gives it an irresistible aroma.
