INGREDIENTE (pentru 2 portii)

  • 2 catei de usturoi
  • 5 grame frunze de busuioc proaspat
  • 100 grame rosii uscate in ulei
  • 15 ml ulei de la rosiile uscate
  • 150 grame crema de branza
  • 150 grame fasole rosie din conserva
  • 15 ml suc de lamaie
  • Sare
  • Piper

Sun-Dried Tomato and Bean Spread

Sun-Dried Tomato and Bean Spread – Big Flavor, Zero Fuss! There are days when the fridge looks empty even though it’s full, and you have neither the energy to cook nor the patience to order takeout. In moments like that, a good spread can truly save the day – especially if it’s creamy, slightly tangy, full of Mediterranean flavor, and ready in the time it takes to say… „blend”. That’s exactly what this sun-dried tomato and bean spread is all about. It doesn’t need a long list of ingredients or advanced cooking skills. It’s one of those friendly recipes you make once and then keep repeating from memory.

INGREDIENTS (for 2 servings)

  • 2 garlic cloves
  • 5 grams fresh basil leaves
  • 100 grams sun-dried tomatoes in oil
  • 15 ml oil from the sun-dried tomatoes
  • 150 grams cream cheese
  • 150 grams canned red beans
  • 15 ml lemon juice
  • Salt
  • Pepper

It all starts with the garlic and basil leaves, tossed straight into a blender. No need to overthink things – everything goes in. Give them a quick blitz to break them down and release some of that fresh aroma. Next come the sun-dried tomatoes – drained, but keep 15 ml of their oil, because it’s too flavorful to waste. Then we add the cream cheese, which brings everything together into that silky, creamy texture that makes you want to sneak an extra spoonful „just to taste”.

Now for the hearty part – the red beans. Make sure they’re well rinsed and drained, so your spread doesn’t turn out too watery. Add the lemon juice, a pinch of salt and pepper to taste, and you’re pretty much done. Just blend it all until smooth and creamy, with a slightly rosy hue that brings to mind those little appetizers you loved on vacation.

Once it’s ready, scoop it into a bowl and serve it with whatever you have nearby – toasted bread, crackers, warm flatbread, or even veggie sticks if it’s one of those healthy days. It works just as well for breakfast, a quick evening snack, or packed up for lunch if you want to look like someone who eats well without overcomplicating things.
