Fasolea mexicana, cunoscuta sub denumirea de „Refried beans” sau „frijoles refritos”, este un preparat traditional din bucataria mexicana si tex-mex, constand in fasole gatita si pasata. De obicei, este servita ca garnitura, intr-un burrito sau ca dip pentru chipsuri de porumb. Populara in restaurantele tex-mex, fasolea refacuta este o componenta comuna in dip-urile stratificate, cum ar fi dip-ul in sapte straturi sau in nachos. Versatila si delicioasa, aceasta reteta adauga savoare si consistenta mancarurilor si face parte din traditia culinara mexicana, fiind o sursa excelenta de proteine si fibre.

INGREDIENTE (pentru 4 portii)
- 1 ceapa rosie
- 1/2 ardei kapia
- 2 catei d eusturoi
- 20 grame ulei de masline
- 1/4 lingurita chimen
- 1/4 lingurita fulgi de chilli
- 400 grame fasole rosie din conserva
- 30 grame apa
- 1/2 lingurita sare
- 1/2 lingurita piper

Tocam fin ceapa, ardeiul gras si usturoiul, apoi adaugam ulei de masline, chimen si fulgi de chili. In cazul in care preferintele nu sunt orientate catre preparate picante, putem omite chilli-ul.

Calim amestecul timp de 3 minute, la foc mediu, amestecand constant, apoi adaugam fasolea scursa si clatita, apa, sare si piper. Lasam sa fiarba timp de 2 minute, la foc mic, amestecand ocazional.
Dupa ce s-au inmuiat, pasam ingredientele cu ajutorul unui blender sau folosind o furculita, pana cand obtinem o compozitie omogena.

Presaram patrunjel verde proaspat si servim fie cald, fie rece, fie ca fel principal, fie ca garnitura sau dip pentru nachos.

INGREDIENTS (for 4 servings)
- 1 red onion
- 1/2 bell pepper
- 2 garlic cloves
- 20 grams olive oil
- 1/4 teaspoon cumin
- 1/4 teaspoon chili flakes
- 400 grams canned red beans
- 30 grams water
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
Finely chop the onion, bell pepper, and garlic, then add olive oil, cumin, and chili flakes. If you prefer non-spicy dishes, you can omit the chili flakes.
Sauté the mixture for 3 minutes on medium heat, stirring constantly. Then, add the drained and rinsed beans, water, salt, and pepper. Let it simmer for 2 minutes on low heat, stirring occasionally.
Once softened, blend the ingredients using a blender or a fork until smooth and homogeneous.
Sprinkle fresh parsley on top and serve either warm or cold, as a main dish, side, or dip for nachos.
