Cremesnit la pahar – desert fin, reinterpretat, inspiratie la fix!Unele deserturi iti raman in minte mult timp dupa ce le-ai gustat. Asa s-a intamplat si cu acest cremsnit la pahar, pe care l-am incercat la Castel Daniel. Nu stiu daca aceasta este reteta exacta, dar gustul, textura si combinatia mi-au ramas intiparite, asa ca mi-am dorit sa-l recreez acasa, asa cum mi-l amintesc. L-am reinterpretat putin, pastrand esenta: crema fina de vanilie, foietaj crocant si un contrast placut de texturi. Varianta la pahar este perfecta atunci cand vrei un desert elegant, usor de servit, dar la fel de spectaculos ca cel clasic. Straturi de crema aerata, foietaj rupt in bucati crocante si nuci caramelizate, toate asezate frumos, pentru un desert care arata bine si se mananca si mai bine.

INGREDIENTE (pentru 6 portii)

  • 1 foaie de aluat de foietaj

Pentru crema de vanilie:

  • 100 g amidon
  • 150 g zahar
  • 650 ml lapte
  • 6 oua
  • 2 lingurite vanilie
  • 1 praf de sare

Pentru crema fina:

  • 200 g unt, la temperatura camerei
  • 1 lingura zahar pudra
  • 100 g smantana dulce pentru frisca
  • 20 g suc de lamaie

Pentru nucile caramelizate:

  • 50 g nuca
  • 2 linguri zahar
  • 50 ml apa rece
Cremsnit la pahar

Pentru aceasta reteta este nevoie sa ne apucam cu o zi inainte, deoarece crema de vanilie trebuie sa fie foarte rece. Intr-un bol mare amestecam amidonul cu zaharul, adaugam laptele, ouale, vanilia si un praf de sare si mixam pana la omogenizare. Punem compozitia pe foc si fierbem, amestecand constant, pana cand obtinem o crema groasa si lucioasa.

Rasturnam crema intr-un bol, o acoperim direct pe suprafata cu folie alimentara, pentru a evita formarea crustei, o lasam sa ajunga la temperatura camerei, apoi o dam la frigider peste noapte.

A doua zi, desfacem foaia de aluat de foietaj, o intepam din loc in loc cu o furculita si o coacem la 180 de grade Celsius timp de aproximativ 15 minute, pana devine frumos rumenita si crocanta. O lasam apoi la racit complet.

Pentru nucile caramelizate, punem apa si zaharul intr-o craticioara mica si le fierbem pana cand zaharul se topeste complet. Adaugam nucile tocate grosier si le lasam pe foc pana se caramelizeaza. Le rasturnam pe o hartie de copt si le lasam sa se raceasca.

Pentru crema fina, mixam untul moale cu zaharul pudra pana devine pufos. Incorporam treptat, mixand continuu, cate o lingura din crema de vanilie rece. La final adaugam sucul de lamaie si smantana dulce si mixam pana obtinem o crema aerata, fina si echilibrata.

Asamblam desertul direct in pahare. Punem un strat de crema, apoi bucati de foietaj rupt, din nou crema si incheiem cu foietaj si nuci caramelizate tocate grosier. Lasam paharele la frigider cateva ore, pentru ca desertul sa se aseze si aromele sa se lege frumos.

Servim cremsnitul la pahar rece, cu multa pofta. Este un desert elegant, fin si extrem de gustos, perfect pentru mese festive sau momentele in care vrei ceva cu adevarat special, inspirat la fix.

Cream Slice in a Glass – a refined dessert, reinterpreted, inspiration at its best! Some desserts stay with you long after the first bite. That’s exactly what happened with this cream slice in a glass, which I tried at Castel Daniel. I don’t know if this is the exact recipe, but the taste, texture, and combination stayed with me, so I wanted to recreate it at home, just as I remember it. I reinterpreted it slightly, keeping the essence: smooth vanilla cream, crispy puff pastry, and a pleasant contrast of textures. The glass version is perfect when you want an elegant dessert that’s easy to serve, yet just as spectacular as the classic one. Layers of airy cream, broken pieces of crunchy puff pastry, and caramelized walnuts, all beautifully assembled for a dessert that looks amazing and tastes even better.

INGREDIENTS (for 6 servings)

  • 1 sheet puff pastry

For the vanilla custard:

  • 100 g cornstarch
  • 150 g sugar
  • 650 ml milk
  • 6 eggs
  • 2 teaspoons vanilla
  • 1 pinch salt

For the light cream:

  • 200 g butter, at room temperature
  • 1 tablespoon powdered sugar
  • 100 g whipping cream
  • 20 g lemon juice

For the caramelized walnuts:

  • 50 g walnuts
  • 2 tablespoons sugar
  • 50 ml cold water

For this recipe, it’s best to start a day ahead, as the vanilla custard needs to be very cold. In a large bowl, mix the cornstarch with the sugar, then add the milk, eggs, vanilla, and a pinch of salt. Whisk until smooth. Transfer the mixture to a saucepan and cook over medium heat, stirring constantly, until you get a thick, glossy custard.

Pour the custard into a bowl, cover it directly on the surface with plastic wrap to prevent a skin from forming, let it cool to room temperature, then refrigerate overnight.

The next day, unroll the puff pastry sheet, prick it all over with a fork, and bake at 180°C (350°F) for about 15 minutes, until golden and crispy. Let it cool completely.

For the caramelized walnuts, place the water and sugar in a small saucepan and cook until the sugar dissolves completely. Add the roughly chopped walnuts and cook until caramelized. Transfer them onto a sheet of baking paper and let them cool.

For the light cream, beat the softened butter with the powdered sugar until fluffy. Gradually incorporate, mixing continuously, one spoonful at a time of the cold vanilla custard. Finally, add the lemon juice and whipping cream, and mix until you obtain an airy, smooth, and well-balanced cream.

Assemble the dessert directly in glasses. Start with a layer of cream, followed by broken pieces of puff pastry, another layer of cream, and finish with more puff pastry and roughly chopped caramelized walnuts. Refrigerate the glasses for a few hours to allow the dessert to set and the flavors to come together beautifully.

Serve the cream slice in a glass well chilled, with great pleasure. It’s an elegant, delicate, and extremely tasty dessert—perfect for festive meals or whenever you want something truly special, inspiration at its best.
