Inchide ochii si imagineaza-ti o terasa insorita undeva in sudul Italiei, un pahar de vin rece si un cos plin cu grisine crocante, parfumate a lamaie, oregano proaspat si masline Kalamata. Acum deschide ochii — pentru ca le poti face chiar tu, acasa, si sunt si mai bune decat ti-ai imaginat! Aluatul de ciabatta are o textura mai umeda decat un aluat obisnuit, iar asta e tocmai secretul acelei cruste crocante perfecte dupa coacere. Nu necesita framantare complicata, nu cere tehnici speciale — doar putina rabdare in timp ce aluatul creste frumos si isi dezvolta aromele. Iar mirosul care iese din cuptor cand se coc? Pur si simplu irezistibil! Perfecte ca aperitiv alaturi de un platou de branzeturi, cu sosuri si dipsuri sau ca si garnitura pentru o masa mediteraneana, aceste grisine sunt versatile, elegante si surprinzator de simple de preparat. INGREDIENTE (pentru 6 grisine)
Pentru aluat:
- 275 ml apa
- 1,5 lingurite drojdie instant uscata
- 25 ml ulei de masline plus extra pentru uns
- 400 grame faina plus extra pentru pudrat
- 1 lingurite sare de mare
Pentru aromatizare:
- coaja de la 1/2 lamaie (fara partea alba)
- 1 lingurita oregano
- 100 grame masline verzi feliate

Incepem prin a toca marunt coaja de lamaie impreuna cu frunzele de oregano proaspat intr-un blender, pana obtinem un amestec fin si parfumat. Punem deoparte.
Intr-un bol mare, dizolvam drojdia instant in apa calduta, cat sa fie placuta la atingere, nu fierbinte. Adaugam uleiul de masline, faina si sarea si amestecam bine pana se formeaza un aluat omogen. Framantam aluatul energic timp de aproximativ 5 minute, pana devine elastic si usor lipicios. Adaugam maslinele si amestecul de lamaie si oregano si mai framantam 2 minute, distribuind uniform toate ingredientele.
Transferam aluatul intr-un bol uns cu ulei de masline, acoperim cu un prosop curat sau folie alimentara si lasam la dospit intr-un loc cald timp de aproximativ o ora, pana isi dubleaza volumul. Aluatul de ciabatta este mai umed si mai moale decat un aluat clasic — asa trebuie sa fie, aceasta umiditate este secretul texturii finale perfecte.

Rasturam aluatul dospit pe o suprafata bine infainata si il pudram si pe deasupra. Cu mainile delicate, intindem aluatul intr-un dreptunghi de aproximativ 40 x 24 cm, avand grija sa pastram cat mai mult aer in interior — nu apasam, ci intindem usor, cu miscari blande.
Taiem fasii de aproximativ 3 cm latime de-a lungul laturii scurte a dreptunghiului. Asezam fiecare fasie pe tava pregatita si o intindem usor cu mainile infainate pana ajunge la aproximativ 30 cm lungime. Repetam pana obtinem cele 6 grisine. Le acoperim si le lasam sa se odihneasca 10 minute. Intre timp, preincalzim cuptorul la 200°C.

Coacem grisinele la 200°C pentru aproximativ 30 de minute, pana devin aurii, crocante si frumos rumenite. Le transferam pe un gratar si le lasam sa se raceasca sau le servim calde — ambele variante sunt la fel de delicioase!
Se servesc calde sau la temperatura camerei, alaturi de un platou de branzeturi, sosuri sau ca garnitura mediteraneana. Daca ramane ceva pentru a doua zi — lucru putin probabil — se pastreaza intr-un recipient etans.

Ciabatta Breadsticks with Olives and Lemon
Close your eyes and imagine a sunny terrace somewhere in the south of Italy, a glass of cold wine and a basket full of crispy breadsticks, fragrant with lemon, fresh oregano and Kalamata olives. Now open your eyes — because you can make them yourself, at home, and they are even better than you imagined! Ciabatta dough has a wetter texture than a regular dough, and that is precisely the secret behind that perfectly crispy crust after baking. It doesn’t require complicated kneading or special techniques — just a little patience while the dough rises beautifully and develops its flavours. And the smell that comes out of the oven when they bake? Simply irresistible! Perfect as an appetiser alongside a cheese board, with sauces and dips, or as a side for a Mediterranean meal, these breadsticks are versatile, elegant and surprisingly simple to prepare. Once you try them, they become a staple on your table! 🫒🍋
INGREDIENTS (for 6 breadsticks)
For the dough:
- 275 ml water
- 1½ teaspoons dried instant yeast
- 25 ml olive oil plus extra for greasing
- 400 g flour plus extra for dusting
- 1 teaspoon sea salt
For flavouring:
- zest of ½ lemon (no white pith)
- 1 teaspoon oregano
- 100 g sliced green olives
We start by finely chopping the lemon zest together with the oregano in a blender until we get a fine, fragrant mixture. Set aside.
In a large bowl, dissolve the instant yeast in lukewarm water — warm enough to be pleasant to the touch, not hot. Add the olive oil, flour and salt and mix well until a smooth dough forms. Knead the dough energetically for approximately 5 minutes, until it becomes elastic and slightly sticky. Add the olives and the lemon and oregano mixture and knead for another 2 minutes, distributing all the ingredients evenly.
Transfer the dough to a bowl greased with olive oil, cover with a clean kitchen towel or cling film and leave to prove in a warm place for approximately one hour, until it doubles in size. Ciabatta dough is wetter and softer than a classic dough — that is exactly how it should be, as this moisture is the secret to the perfect final texture.
Turn the proved dough out onto a well-floured surface and dust the top with flour as well. With gentle hands, stretch the dough into a rectangle of approximately 40 x 24 cm, taking care to retain as much air as possible inside — don’t press, just stretch gently with light movements.
Cut strips of approximately 3 cm wide along the short edge of the rectangle. Place each strip onto a prepared baking tray and gently stretch with floured hands to approximately 30 cm in length. Repeat until you have all 6 breadsticks. Cover and leave to rest for 10 minutes. Meanwhile, preheat the oven to 200°C.
Bake the breadsticks at 200°C for approximately 30 minutes, until golden, crispy and beautifully browned. Transfer onto a wire rack to cool or serve warm — both options are equally delicious!
Serve warm or at room temperature, alongside a cheese board, dips or as a Mediterranean side. If anything is left for the next day — which is unlikely — store in an airtight container.
