Panna cotta cu caramel sarat & nuci caramelizate este un desert “fancy”, extrem de gustos si aspectuos. Ca sa nu mai punem la socoteala ca desi arata foarte elaborat este usor de executat. Pasul cel mai complicat este asteptarea … practic deschizi frigiderul din ora in ora sa verifici daca este gata … 😜

INGREDIENTE / INGREDIENTS

(pentru 2 portii / for 2 servings)

Pentru panna cotta / For panna cotta

  • 300 ml smantana dulce / 300 ml double cream
  • 100 ml lapte / 100 ml milk
  • 150 ml apa / 150 ml water
  • 100 grame zahar / 100 grams sugar
  • 1 lingurita esenta vanilie / 1 teaspoon vanilla
  • 10 grame gelatina / 10 grams gelatine powder
  • 1 varf lingurita sare / pinch of salt

Pentru praline / For praline

  • 100 grame zahar / 100 grams sugar
  • 50 grame nuci pecan / 50 grams pecan nuts

Intr-o craticioara mica punem la incalzit smantana, laptele si vanilia. Inainte de a ajunge la punctul de fierbere stingem focul. Intre timp punem gelatina la hidratat in 75 ml apa.

Intr-o alta craticioara punem zaharul la topit. Cand acesta este caramelizat, adaugam 75 ml apa, lasam sa fiarba pana cand tot caramelul este dizolvat si adaugam amestecul de lapte si sarea. Aducem la punctul de fierbere, stingem focul si adaugam gelatina, amestecand pana cand aceasta este dizolvata. Punem panna cotta in 2 pahare, lasam sa ajunga la temperatura camerei apoi dam la frigider minim 4 ore.

Intre timp pregatim pralinele. Topim zaharul si adaugam cu grija nucile pecan. Amestecam astfel incat nucile sa fie acoperite cu caramel si rasturnam amestecul pe o hartie de copt unsa cu foarte putin ulei. Cand se raceste taiem nucile caramelizate cu ajutorul unui cutit bine ascutit.

Salted Caramel Panna Cotta & Praline

Salted caramel Panna cotta & praline is a „fancy” dessert, extremely tasty and good-looking. Not to mention that although it looks very elaborate, it is very easy to execute. The most complicated step is waiting … you practically open the fridge every hour to check if you are ready … 😜

In a small saucepan, heat the cream, milk and vanilla. Before reaching the boiling point, turn off the heat. Meanwhile, hydrate the gelatin in 75 ml of water.

In another saucepan, melt the sugar. When it is caramelized, add 75 ml of water, let it boil until all the caramel is dissolved and add the milk and double cream mixture and salt. Bring to boil, turn off the heat and add the gelatin, stirring until it is dissolved. Put the mixture in 2 glasses. Let it reach at room temperature then refrigerate for at least 4 hours.

In the mean time we prepare the pralines. Caramelize the sugar and carefully add the pecans. Stir so that the walnuts are covered with caramel and pour the mixture on a baking sheet greased with very small quantity of oil. When it cools, cut the caramelized nuts with a sharp knife.

Serve panna cotta with praline.
