Aceasta reteta de vinete la cuptor cu branza si smochine foloseste ingrediente sanatoase si simple pentru o cina delicioasa si satioasa. Este o reteta usor de facut pe care o puteti introduce in rutina cinelor servite acasa. De regula, preferintele noastre alimentare sunt simple, dar extrem de aromate si consistente inclinate destul de mult spre bucataria mediteraneana sau italiana. Asadar, acest preparat este cu siguranta unic prin combinatia de arome si simplitate.

INGREDIENTE / INGREDIENTS
(pentru 2 portii / for 2 servings)
- 1 vanata / 1 eggplant
- 100 grame ricotta / 100 grams ricotta
- 40 grame branza de capra / 40 grams goat cheese
- 1 lingurita cimbru / 1 teaspoon thyme
- 1 smochina / 1 fig
- 8 mure / 8 blackberries
- 1 ceapa rosie mica / 1 small red onion
- 4 linguri ulei de masline / 4 tablespoons olive oil
- Sare / Salt
- Cimbru proaspat / Fresh thyme

Spalam vanata si o taiem pe jumatate. Crestam fiecare jumatate de vanata pe diagonala la distanta de 2 cm astfel incat sa obtinem romburi, avand totodata grija sa nu strapungem coaja. Presaram cu sare mare, cimbru si ulei de masline.

Introducem vanata la cuptorul incins la 180 grade Celsius pentru 30 – 40 de minute pana cand este frumos rumenita.
Impartim ricotta in 2 parti egale si o adaugam peste fiecare jumatate de vanata coapta amestecand usor branza cu miezul vinetei. Adaugam deasupra branza de capra.

Decoram cu felii de smochine, mure, felii de ceapa rosie, cimbru si servim cu multa pofta.

Oven Baked Eggplant with Cheese and Figs
This recipe for oven baked eggplant with cheese and figs uses healthy and simple ingredients for a delicious and filling dinner. It is an easy recipe that you can introduce into the routine of dinners served at home. As a rule, our food preferences are simple, but extremely aromatic and consistent, leaning quite a bit towards Mediterranean or Italian cuisine, so this dish is definitely unique due to the combination of flavors and simplicity.
Wash the eggplant and cut it in half. Cut each half of the eggplants diagonally at a distance of 2 cm so as to obtain rhombuses and being careful not to pierce the skin. Sprinkle with coarse salt, thyme and olive oil.
Put the eggplants in the oven heated to 180 degrees Celsius for 30-40 minutes until it is nicely browned.
Divide the ricotta into 2 equal parts and add it over each half of the baked eggplant, gently mixing the cheese with the eggplant core. Add goat cheese on top.
Decorate with slices of figs, blackberries, slices of red onion, thyme and serve with great appetite.
