De unde a inceput istoria barbacoa, guacamole & pico de gallo?
Netflix, premiera, Miss Bala … ok … si ce legatura au cu blogul meu? Raspunsul e foarte simplu … barbacoa. 😀 Vad in film barbacoa si ma intreb ce ar putea sa fie. La o simpla cautare descopar ca este o specialitate provenita din Mexic si Caraibe, avand la baza carnea de vita gatita lent pana cand devine extrem de frageda.
Carnea de vita, perfect condimentata se gateste pana se desface usor cu furculita inainte de a fi combinata cu cateva linguri din sosul in care a fiert pentru o aroma completa.
INGREDIENTE / INGREDIENTS
(pentru 4 portii / for 4 servings)
Pentru barbacoa / For barbacoa:
- 600 grame antricot de vita / 600 grams veal steak
- 3 lingurite condiment mexican / 3 teaspoons mexican spices
- 6 catei de usturoi / 6 garlic cloves
- 3 ardei iuti uscati / 3 dried hot peppers
- 1 lingurita chimen / 1 teaspoon caraway
- 1 lingurita oregano / 1 teaspoon oregano
- Sucul de la 1/2 lime / Juice from 1/2 lime
- 1 cana supa de vita / 1 cup veal soup
- Sare / Salt
Pentru guacamole / For guacamole:
- 1 avocado / 1 avocado
- 2 cepe verzi / 2 green onions
- 2 linguri ulei de masline / 2 tablespoons olive oil
- 2 linguri suc de lime / 2 tablespoons lime juice
- 2 linguri ulei de masline / 2 tablespoons olive oil
- Sare / Salt
Pentru pico de gallo / For pico de gallo:
- 2 rosii / 2 tomatoes
- 1 ceapa rosie / 1 red onion
- 2 linguri patrunjel tocat fin / 2 tablespoons finely chopped parsley
- 2 linguri ulei de masline / 2 tablespoons olive oil
- 2 linguri suc de lime / 2 tablespoons lime juice
- Sare / Salt
Primul pas este condimentarea carnii de vita. O presaram cu sare si condiment mexican. Reteta condimentului mexican, o gasiti aici. Lasam carnea la marinat minim 12 ore. Cu o ora inainte de a o pregati o scoatem din frigider pentru a ajunge la temperatura camerei.
Am ales sa pregatesc carnea la Tefal One Pot, insa la fel de bine se poate gati in cuptor intr-o oala, de preferat, de fonta cu capac. Asadar la Tefal, alegem programul “Brown”, incingem uleiul si prajim carnea pe ambele parti. Intre timp, mixam intr-un blender restul ingredientelor si turnam amestecul peste carne. Punem capacul si alegem functia “Slow cook” pentru 9 ore.
Cand carnea este gata, o scoatem pe o farfurie si o desfacem in fasii subtiri cu ajutorul a doua furculite. Turnam deasupra cateva linguri de sos si amestecam bine.
Intre timp pregatim guacamole. Strivim avocado cu ajutorul unei furculite. Adaugam sucul de lime, uleiul de masline, sarea si ceapa verde tocata marunt.
Pentru pico de gallo, taiem rosiile si ceapa marunt. Adaugam sarea, sucul de lime, uleiul de masline, patrunjelul si amestecam.
Punem folosi lipii cumparate sau putem sa le pregatim dupa aceasta reteta.

Where did the history of barbacoa, guacamole & pico de gallo begin?
Netflix, movie, Miss Bala… ok … and what do they have to do with my blog? The answer is very simple… barbacoa. 😀 I see barbacoa in the movie and I wonder what it could be. A simple search reveals that it is a specialty from Mexico and the Caribbean, based on slow-cooked beef until it becomes extremely tender.
The perfectly seasoned beef is cooked until it is cut easily with a fork before being combined with a few tablespoons of the sauce in which it boiled for a complete flavor.
The first step is to season the beef. Sprinkle with salt and Mexican spice. The recipe for Mexican spice can be found here. Let the meat marinate for at least 12 hours. One hour before preparing it, take it out of the fridge to reach room temperature.
I chose to prepare the meat at Tefal One Pot, but it can also be cooked in the oven in a pot with lid, preferably from cast iron. So at Tefal, we choose the „Brown” program, heat the oil and fry the meat on both sides. Meanwhile, mix the rest of the ingredients in a blender and pour the mixture over the meat. Put the lid on and choose the „Slow cook” function for 9 hours.
When the meat is cooked, take it out on a plate and break it into thin strips with two forks. Pour a few tablespoons of sauce on top and mix well.
Meanwhile, prepare guacamole. Crush the avocado with a fork. Add lime juice, olive oil, salt and finely chopped green onions.
For pico de gallo, cut the tomatoes and onion into small pieces. Add salt, lime juice, olive oil, parsley and mix.
We use the flate bread bought or we can prepare them according to this recipe.
Serve barbacoa with flate bread, guacamole, pico de gallo, sour cream and baked corn.
