Cacciucco este o tocana de origine toscana, constand din mai multe tipuri diferite de peste si crustacee. O traditie spune ca ar trebui sa existe cinci tipuri diferite de peste in tocana, cate unul pentru fiecare litera “c” din cacciucco. Eu am ales creveti, calamari, caracatita, midii, vongole si peste cod.

INGREDIENTE / INGREDIENTS
(pentru 4 portii / for 4 servings)
- 4 linguri ulei de masline / 4 tablespoons olive oil
- 1 ceapa / 1 onion
- 4 catei usturoi / 4 garlic cloves
- 1 lingurita oregano / 1 teaspoon oregano
- 1/2 lingurita chilli / 1/2 teaspoon chilli
- 1 lingura patrunjel verde / 1 tablespoon parsley
- 4 linguri pasta de tomate / 4 tablespoons tomato sauce
- 1 ceasca vin alb sec / 1 cup dry white wine
- 250 grame baby calamar / 250 grams baby calamari
- 250 grame baby caracatita / 250 grams baby octopus
- 250 grame cod / 250 grams codfish
- 250 grame creveti mari / 250 grams large shrimps
- 250 grame midii / 250 grams mussels
- 250 grame vongole / 250 grams clams
- Sare / Salt
- Piper / Pepper

Intr-o tigaie incingem uleiul de masline si adaugam ceapa si usturoiul taiate marunt. Calim usor la foc mediu si adaugam oregano si fulgii de chilli. Gatim timp de 1 minut, apoi adaugam calamarii, caracatita, 50 ml apa si lasam pe foc mediu aproximativ 4 minute. Adaugam pasta de rosii, amestecam bine si gatim timp de 1 minut, apoi adaugam vinul si piperul si mai lasam pe foc mediu timp de 15 minute, amestecand des.

Adaugam apoi pestele taiat fasii, midiile si vongolele si continuam sa gatim inca 5 minute. La sfarsit adaugam crevetii si mai gatim 2 minute. Stingem focul si presaram patrunjel verde.

Servim tocana toscana cu fructe de mare alaturi de paine de casa cu masline si un pahar de vin alb rece.

Cacciucco – Tuscana Stew
Cacciucco is a stew with Tuscan origin, consisting of several different types of fish and shellfish. A tradition says that there should be five different types of fish in the stew, one for each letter „c” in the cacciucco. I chose shrimp, squid, octopus, mussels, clams and codfish.
Heat the olive oil in a pan and add the finely chopped onion and garlic. Heat lightly over medium heat and add oregano and chilli flakes. Cook for 1 minute, then add the squid, octopus and 50 ml of water and leave on medium heat for about 4 minutes. Add the tomato sauce, mix well and cook for 1 minute, then add the wine and pepper and leave on medium heat for 15 minutes, stirring often.
Then add the sliced fish, mussels and clams and continue to cook for another 3-4 minutes. At the end add the shrimp and cook for another 2 minutes. Turn off the heat and sprinkle with green parsley.
Serve Tuscan stew with seafood with homemade bread with olives and a glass of cold white wine.
