INGREDIENTE (pentru 4 portii)

  • 250 grame ficatei de pui
  • 5 oua
  • 1/2 tulpina telina apio
  • 4 cepe verzi
  • 1 legatura de patrunjel verde
  • 70 grame cascaval
  • 50 ml lapte
  • 1 lingura ulei de masline
  • Sare

Pentru inceput, curatam temeinic ficateii si ii spalam sub un jet de apa rece, asigurandu-ne ca sunt complet curati. Ii transferam apoi intr-o cratita cu apa fierbinte si ii lasam sa fiarba la foc mediu timp de aproximativ 15 minute. Dupa fierbere, ii scoatem cu grija, ii scurgem bine si ii lasam sa se raceasca la temperatura camerei.

Intr-un alt vas, punem ouale la fiert in apa clocotita si le lasam timp de 10 minute, astfel incat sa obtinem un galbenus ferm. Odata fierte, le curatam cu atentie si le lasam sa se raceasca.

Intr-un bol adanc, batem energic doua oua cu un praf de sare, pana cand devin usor spumoase. Incorporam treptat laptele, cascavalul ras, telina apio taiata fin, ceapa verde feliata si patrunjelul proaspat tocat. Adaugam apoi ficateii si ouale fierte, pe care le tocam grosier, astfel incat sa se simta textura fiecarui ingredient.

Turnam compozitia rezultata intr-o tava de chec, pe care am uns-o in prealabil cu putin ulei de masline. Separat, batem un ou cu un praf de sare si il turnam deasupra, pentru a obtine o crusta aurie si apetisanta. Introducem tava in cuptorul preincalzit la 180°C si coacem timp de aproximativ 40 de minute, pana cand checul capata o culoare frumos rumenita.

Lasam preparatul sa se raceasca inainte de a-l felia, apoi il servim rece, alaturi de legume proaspete, pentru un contrast de arome si texturi.

INGREDIENTS (for 4 servings)

  • 250 grams chicken livers
  • 5 eggs
  • 1/2 stalk celery
  • 4 green onions
  • 1 bunch fresh parsley
  • 70 grams grated cheese
  • 50 ml milk
  • 1 tablespoon olive oil
  • Salt

To start, thoroughly clean the chicken livers and rinse them under cold water, making sure they are completely clean. Then, transfer them to a pot with hot water and let them simmer on medium heat for about 15 minutes. After boiling, carefully remove them, drain well, and let them cool to room temperature.

In another pot, place the eggs in boiling water and let them cook for 10 minutes, so that the yolks become firm. Once boiled, peel them carefully and set them aside to cool.

In a deep bowl, whisk two eggs with a pinch of salt until they become slightly frothy. Gradually add the milk, grated cheese, finely chopped celery, sliced green onions, and freshly chopped parsley. Then, add the chicken livers and the boiled eggs, which should be coarsely chopped, so you can feel the texture of each ingredient.

Pour the resulting mixture into a loaf pan that has been greased with a bit of olive oil. In a separate bowl, beat one egg with a pinch of salt and pour it over the mixture to get a golden, appetizing crust. Place the pan in a preheated oven at 180°C and bake for about 40 minutes, until the cake turns a nice golden brown.
