Acest fel de mancare este nu doar un festin pentru simturi, ci si o demonstratie de arta culinara, unde fiecare ingredient este atent selectionat si preparat cu maiestrie. INGREDIENTE (pentru 4 portii)
- 500 grame creveti proaspeti nedecorticati
- 1 ceapa mica
- 1 legatura patrunjel
- 6 catei de usturoi
- 1 foaie dafin
- 1 lime
- 1/4 lingurita chilli
- Sare
- 50 grame unt
- 1 lingurita amidon
- 50 ml vin alb sec
- 75 ml supa de creveti

Incepem prin a pregati crevetii. Ii decorticam, indepartam usor firul negru, ii spalam bine si ii uscam cu un servetel absorbant, apoi ii pastram la rece.
Intr-un ibric, punem cochiliile de la 8 – 10 creveti impreuna cu o cana de apa, o foaie de dafin, o ceapa taiata in patru, sare si coditele de la patrunjel. Fierbem amestecul timp de 20 de minute, apoi il strecuram si pastram doar supa de creveti.

Taiem untul in cubulete mici pe care le trecem prin amidon. Incalzim o tigaie si adaugam cubuletele de unt. Cand untul este topit, adaugam usturoiul tocat marunt si calim timp de 20 de secunde, apoi adaugam crevetii. Gatim la foc mediu cate un minut pe fiecare parte, apoi adaugam vinul alb, sucul de lime, sarea si fulgii de chilli. Continuam sa gatim pentru inca 3 minute, apoi scoatem crevetii in vasul de servire.

In sosul ramas in tigaie, adaugam supa de creveti si mai gatim timp de 3 – 4 minute pana cand sosul devine consistent. Adaugam patrunjelul verde ramas si turnam sosul peste creveti.
Servim crevetii cu sos de unt si vin alaturi de focaccia calda si un pahar de vin alb rece.

Shrimps with Butter and Wine Sauce

INGREDIENTS (for 4 servings)
- 500 grams unpeeled fresh shrimps
- 1 small onion
- 1 bunch parsley
- 6 cloves garlic
- 1 bay leaf
- 1 lime
- 1/4 teaspoon chili
- Salt
- 50 grams butter
- 1 teaspoon starch
- 50 ml dry white wine
- 75 ml shrimp soup
Start by preparing the shrimps. Peel them, gently remove the black thread, wash them well and dry them with an absorbent napkin, then keep them cold.
In a kettle, put the shells of 8 – 10 shrimps together with a cup of water, a bay leaf, an onion cut into quarters, salt and the parsley tails. Boil the mixture for 20 minutes, then strain it and keep only the shrimp soup.
Cut the butter into small cubes and pass them through the starch. Heat a pan and add the cubes of butter. When the butter is melted, add the finely chopped garlic and saute for 20 seconds, then add the shrimps. Cook on medium heat for one minute on each side, then add the white wine, lime juice, salt and chili flakes. Continue to cook for another 3 minutes, then remove the shrimps to the serving dish.
In the sauce left in the pan, add the shrimp soup and cook for another 3-4 minutes until the sauce becomes thick. Add the remaining green parsley and pour the sauce over the shrimp.
Serve shrimps with butter and wine sauce alongside warm focaccia and a glass of cold white wine.
