Homemade Greek Gyros sau asa zisul gyros grecesc se poate pregati atat de simplu si acasa! Veti vedea ca puteti recrea acest deliciu mediteraneen in propria bucatarie fara prea mare efort. Atat de gustos, acest gyros poate fi servit pe un platou insa la fel de bine putem sa unplem o lipie cu multa carne, legume si tzatiki.

INGREDIENTE / INGREDIENTS

(pentru 4 portii / for 4 servings)

  • 600 grame pulpe de pui dezosate / 600 grams boneless chicken thighs
  • 1 ceapa / 1 onion
  • 5 catei de usturoi / 5 garlic cloves
  • 1/2 lingurita piper cu lamaie / 1/2 teaspoon lemon pepper
  • 1 lingurita oregano / 1 teaspoon oregano
  • 1 lingurita sare / 1 teaspoon salt
  • 1/4 lingurita pudra de chilli / 1/4 teaspoon chilli powder
  • 1 lingutita ulei de masline / 1 teaspoon olive oil

Spalam bine pulpele de pui, le stergem cu un servetel absorbant si le impartim in 2 parti egale. O parte o taiem in bucati mici de dimensiunea degetului mare, iar cealalata parte o punem intr-un blender, alaturi de ceapa taiata in 4 si cateii de usturoi.

Eu am folosit usturoi proaspat romanesc si nu este foarte puternic. Insa daca folositi varianta din import, va recomand sa folositi numai 2, maxim 3, in functie de dimensiunea lor.

Mixam bine pana cand obtinem o pasta, apoi rasturnam intr-un bol peste bucatile de pui. Adaugam toate condimentele si lasam la marinat la frigider 8 – 12 ore, ideal de seara pana a doua zi.

Pe blatul de lucru punem 2 folii de aluminiu suprapuse si rasturnam deasupra carnea marinata. Modelam sub forma unui cilindru si invelim in folia de aluminiu. Infigem bete metalice de frigarui pe ambele capete ale ruloului. Tapetam o tava cu folie de aluminiu si sprijinam betele pe marginile tavii astfel incat cilindrul sa nu atinga tava.

Introducem tava in cuptorul incins la 180 grade Celsius pentru 90 de minute. La jumatatea timpului scoatem tava din cuptor si rasucim ruloul cu mare grija, deoarece se va scurge din sosul strans.

La expirarea timpului scoatem din nou tava din cuptor si desfacem folia de aluminiu. Atentie la aburul si sosul fierbinte! Dupa ce indepartam toata folia de aluminiu introducem din nou in cuptor pornind functia grill pentru 10 minute pe fiecare parte pana cand carnea este frumos rumenita.

Lasam la racit, apoi cu ajutorul unui cutit bine ascutit feliem carnea foarte subtire. Incalzim o tigaie, o ungem cu foarte putin ulei de masline si prajim feliile de gyros in 2 – 3 transe astfel incat sa nu aglomeram foarte tare tigaia.

Servim gyrosul cu mix salata verde, castraveti, salata de rosii si ceapa si bineinteles tzatiki. Pentru un gust 100% autentic grecesc presaram oregano peste tot platoul inainte de servire.

Homemade Greek Gyros

Homemade Greek Gyros or the so-called Greek gyros can be prepared so simply at home! You will see that you can recreate this Mediterranean delicacy in your own kitchen without much effort. So tasty, this gyros can be served on a plate, but you can just as well fill a pita bread with lots of meat, vegetables and tzatiki.

Wash the chicken thighs well, wipe them with an absorbent napkin and divide them into 2 equal parts. Cut one part into small pieces the size of the thumb, and put the other part in a blender, along with the onion cut into 4 and the garlic cloves.

I used fresh Romanian garlic and it is not very strong. But if you use the imported version, I recommend you to use only 2, maximum 3, depending on their size.

Mix well until get a paste, then pour over the chicken pieces in a bowl. Add all the spices and leave to marinate in the refrigerator for 8 – 12 hours, ideally from the evening to the next day.

Place 2 overlapping aluminum foils on the worktop and turn the marinated meat over. Shape into a cylinder and wrap in aluminum foil. Insert metal skewer sticks on both ends of the roll. Line a tray with aluminum foil and rest the sticks on the edges of the tray so that the cylinder does not touch the tray.

Place the tray in the oven heated to 180 degrees Celsius for 90 minutes. Halfway through the time, remove the tray from the oven and twist the roll very carefully, because it will drain from the thick sauce.

At the end of the time, remove the tray from the oven again and open the aluminum foil. Beware of steam and hot sauce! After removing all the aluminum foil, put it back in the oven, turning on the grill function for 10 minutes on each side until the meat is nicely browned.

Let it cool, then with the help of a well-sharpened knife, slice the meat very thin. Heat a pan, grease it with a small quantity of olive oil and fry the gyros slices in 2-3 batches so as not to overcrowd the pan.

Serve the gyros with mixed green salad, tomato and onion salad and of course tzatiki. For a 100% authentic Greek taste, sprinkle oregano all over the plate before serving.
