Garlic Chicken Thighs
Garlic Chicken Thighs – a recipe that melts right on your plate! Looking for something simple yet packed with flavor? A dish that works just as well on a busy weekday as it does for a cozy weekend lunch? You’re in the right place. These garlic chicken thighs are that kind of recipe: few ingredients, minimal effort, and tons of flavor in return. We give them a quick salt rub, let them rest in the fridge for a bit, then sear them golden and let the magic happen under a lid. And then… garlic enters the scene, lifting everything to that “oh wow, what smells so good in here?!” level. This is the kind of dish that saves the day when you want juicy, tender meat, a simple sauce that pulls its weight, and a classic side to bring everything together. Mashed potatoes and a fresh green salad are the usual suspects here—but feel free to get creative with whatever you’ve got in the pantry.
INGREDIENTS (for 4 servings)
- 1 kg boneless chicken thighs
- Salt
- 1 whole garlic bulb
- 2 tablespoons olive oil
- 150 ml water
Start by rubbing the chicken thighs generously with salt and letting them rest in the fridge for 2–3 hours. This step makes them extra tender and full of flavor.
When you’re ready to cook, heat 2 tablespoons of olive oil in a deep pan or pot. Add the chicken thighs and sear them for about 3 minutes on each side, until golden brown and beautifully fragrant (the kind of smell that makes your neighbors jealous).
Pour in 150 ml of water and cover the pot with a lid. Let the chicken cook gently on low heat for about 20 minutes. This slow simmer will leave them tender, juicy, and packed with flavor.
Now comes the magic moment: add the crushed garlic (don’t hold back—we want that garlic to shine!) and cook everything for another 2–3 minutes so it infuses the sauce.
We love this with creamy mashed potatoes and a simple green salad with vinegar or lemon juice. But it also goes great with rice, couscous, or even a hot, cozy serving of polenta if you’re feeling that rustic comfort food vibe.
