Bucataria Palatului Otoman este o capodopera incontestabila si o mostenire culturala a Turciei. Ea combina cele mai bune influente din multe culturi: turca, araba, mediteraneana, balcanica, caucaziana si altele. Cei mai buni bucatari ai perioadei magnifice, timp de multe secole, si-au creat capodoperele culinare pentru sultani si curtenii lor. Retetele au fost pastrate cu grija si transmise de la o generatie la alta! Din pacate, odata cu caderea Imperiului Otoman, aceasta mostenire unica a disparut aproape complet si a devenit uitata. Deraliye Ottoman Cuisine Restaurant Istanbul isi propune sa repare aceasta nedreptate! Si as putea spune ca le reuseste pe deplin.

Timp de mai bine de un deceniu, Necati Yilmaz a cercetat minutios si a colectionat retete din palate istorice, reunind astfel 425 de capodopere culinare. Aceste preparate, odinioara savurate de sultani si suita lor, imbogatesc astazi meniurile restaurantelor Necati din Istanbul. De la pepene dulce umplut cu carne de vita si migdale pana la supa de cirese si kebab de gasca rafinat, oferta sa culinara impresioneaza prin arome si rafinament.

Oaspetii pot participa si la cursuri de gatit conduse de insusi Necati, unde invata sa recreeze aceste mancaruri regale. Expertiza culinara a lui Necati se extinde la activitatea de consultanta pentru seriale precum „Magnificent Century” si la evaluari constant ridicate pe TripAdvisor, castigand laude chiar si de la critici apreciati precum Dr. Oz si George Miller. Cu recunoasterea Lonely Planet printre cele mai bune restaurante din lume, unitatile lui Necati Yilmaz ofera o experienta cu adevarat regala.

Restaurantul este locat la cca. 8-9 minute de Grand Bazaar si cam tot atatea de Moscheea Albastra sau Hagia Sofia, deci cum nu se poate mai bine.

Este recomandat sa faceti rezervare in prealabil deoarece locatia cu peste 22 de ani de activitate, este teribil de cunoscuta, apreciata (cu mentiuni in ghidurile Michelin 2024 si Gault&Millau 2024) si „vanata” de catre localnici si turisti deopotriva, desi nu este un local deloc ieftin. In lipsa unei rezervari prealabile, gazdele va vor refuza politicos, lucru nu prea des intalnit in aceasta parte de lume.

Odata ajunsi si asezati la masa, am primit din partea gazdelor un mic aperitiv – ceva foarte bun (nu am reusit sa ne dam seama ce era, iar cand ne-am hotarat sa intrebam, era prea tarziu…)

Am comandat apoi de la aperitivele reci Mixed Appetizer Plate cu cinci preparate orientale specifice: Mutabbal, Baba Ganoush, Muammara, Humus, Cherry Leaf Wrap (varianta lor de sarmalute, servite reci) si Lamb Neck with Thyme (pentru o parte din ele gasiti retetele pe blog).


La felul principal am ales: Grilled Octopus served with eggplant puree, Shrimp Casserole with Garlic Sauce (un preparat pe care l-am incercat in multe locuri, insa aici avea amprenta orientala), Shepherd Salad with Pomegranate Syrup, Grilled Chicken Wings, Kirde Kebab (fried beef with yoghurt), Ali Nazik Kebab (lamb skewers over roasted eggplant and garlic yoghurt), toate preparatele delicioase.





Am incheiat desigur cu o Baklava cu inghetata elastica – absolut senzationala.

La final am avut placerea sa il vedem in actiune pe insusi Chef Necati Yilmaz care a facut un mic show prin servirea unui preparat la o masa alaturata.

Am plecat rostogolindu-ne, complet satisfacuti de experienta autentica a bucatariei otomane din trecut reinterpretata cu atata maiestrie de Chef Necati Yilmaz.

And I could say they succeed perfectly.
For over a decade, Necati Yilmaz meticulously studied and collected recipes from ancient palaces, resulting in a collection of 425 culinary masterpieces. These dishes, once enjoyed by sultans and their entourage, now grace the tables of Necati’s restaurants in Istanbul. From sweet melon stuffed with beef and almonds to cherry soup and delicate goose kebab, his menu boasts delicious delights. Guests can also participate in cooking classes led by Necati himself, where they learn to recreate these royal dishes. Necati’s culinary expertise extends to consultancy work for series such as Magnificent Century and consistently high ratings on TripAdvisor, earning praise even from esteemed critics like Dr. Oz and George Miller. Without a prior reservation, the hosts will politely refuse you—something not very common in this part of the world.
Once we arrived and were seated, we were offered a small appetizer from the hosts—something very delicious (we couldn’t quite figure out what it was, and by the time we decided to ask, it was too late…).
We ordered from the cold appetizers: Mixed Appetizer Plate with five specific oriental dishes—Mutabbal, Baba Ganoush, Muammara, Hummus, Cherry Leaf Wrap (their version of stuffed grape leaves, served cold), and Lamb Neck with Thyme (you can find recipes for some of these on the blog).
For the main course, we chose: Grilled Octopus served with eggplant purée, Shrimp Casserole with Garlic Sauce (a dish we have tried in many places, but here it had an oriental touch), Shepherd Salad with Pomegranate Syrup, Grilled Chicken Wings, Kirde Kebab (fried beef with yogurt), Ali Nazik Kebab (lamb skewers over roasted eggplant and garlic yogurt)—all absolutely delicious.
We, of course, finished with Baklava with elastic ice cream—absolutely sensational.
At the end, we had the pleasure of seeing Chef Necati Yilmaz in action, putting on a small show while serving a dish at a nearby table.
We left rolling out of there, completely satisfied with the authentic experience of Ottoman cuisine from the past, masterfully reinterpreted by Chef Necati Yilmaz.
