Gua Bao – Bao Buns moi, pufoase, umplute cu carne lipicioasa frageda de porc, iar pentru cei care doresc o varianta mai lejera, cu carne de curcan. Astazi vom invata cum sa le preparam acasa, pas cu pas. Acesta este genul de „street food” la care veti tanji si pe care veti dori sa il refaceti cat mai curand. Dar in fond ce sunt aceste Bao Buns? Bao Buns sunt niste „chifle aburite”, un deliciu cald, pufos, usor dulceag pe care le umplem cu carne, sosuri si arome asiatice.

INGREDIENTE / INGREDIENTS

Pentru Bao Buns / For Bao Buns

  • 2 1/2 cani faina / 2 1/2 cups flour
  • 1/3 cana apa calda / 1/3 cup warm water
  • 1/2 cana lapte cald / 1/2 cup warm milk
  • 1 lingurita drojdie uscata / 1 teaspoon active dry yeast
  • 1/2 lingurita praf de copt / 1/2 teaspoon baking powder
  • 1 lingura zahar / 1 tablespoon sugar
  • 1 lingura ulei / 1 tablespoon oil
  • 1/4 lingurita sare / 1/4 teaspoon salt

Pentru carne / For the meat

  • 300 grame fleica de porc / 300 grams pork belly
  • 300 grame pulpa de curcan / 300 grams turkey leg
  • 2 cani supa sau apa / 2 cups soup or water
  • 1 lingurita ghimbir / 1 teaspoon ginger
  • 4 catei de usturoi / 4 garlic cloves
  • 1 lingurita otet de orez / 1 teaspoon rice vinegar
  • 1 lingurita zahar / 1 teaspoon sugar
  • Sare / Salt

Pentru glazurarea carnii / For the meat glaze

  • 2 linguri ulei / 2 tablespoons oil
  • 1/4 lingurita piper / 1/4 teaspoon pepper
  • 1 lingurita ghimbir / 1 teaspoon ginger
  • 1 ardei iute rosu mic taiat marunt / 1 small red pepper finely choped
  • 2 lingurite miere / 2 teaspoons honey
  • 2 lingurite zahar brun / 2 teaspoons brown sugar
  • 3 lingurite sos de soia / 3 teaspoons soya sauce
  • Sare / Salt

Pentru pregatirea chiflelor amestecam apa calda cu laptele, drojdia, zaharul si uleiul. Lasam drojdia sa se activeze timp de 10 minute. Intre timp, amestecam faina, zaharul, praful de copt si sarea in bolul unui mixer. Turnam apoi amestecul lichid peste ingredientele uscate si incepem sa mixam la viteza mica pana obtinem un aluat omogen. Framantam timp de 3 minute la viteza medie pana obtinem un aluat elastic, nu foarte moale care nu se va lipi de degete sau de peretii bolului de amestecare.

Mutam aluatul intr-un bol si il acoperim cu folie alimentara. Lasam la dospit intr-un loc cald aproximativ 2 ore. Rasturnam aluatul pe o planseta si il intindem intr-o foaie groasa de aproximativ 0,6 cm. Taiem aluatul sub forma de cercuri cu diametrul de 9 – 10 cm.

Se ung chiflele cu foarte putin ulei si se pliaza pe jumatate. Presam usor marginile chiflei si o asezam pe o hartie de copt. Acoperim cu un prosop si lasam sa se mai odihneasca 30 de minute.

Intre timp pregatim un vas de fiert la abur si asezam in el chiflele. Acoperim cu un capac si fierbem timp de 10 – 12 minute. Deschidem cu grija capacul astfel incat aburul sa se elibereze treptat. Servim Bao Buns cu umplutura delicioasa de carne.

Pentru a pregati umplutura, punem carnea intr-un vas de fonta si adaugam toate ingredientele necesare prepararii fripturii de porc si curcan. Acoperim cu un capac si gatim la foc mic timp de 2 ore pana cand carnea devine frageda. Scurgem carnea si o taiem in bucati.

Adaugam cate o lingura de ulei in 2 tigai si amestecam toate ingredientele pentru glazura intr-un bol mic. Incingem uleiul si adaugam in fiecare tigaie, carnea de porc si carnea de curcan. Prajim la foc mare pana cand carnea incepe sa devina aurie. Impartim amestecul pentru glazura in 2 parti egale si turnam peste carne in fiecare tigaie. Continuam sa gatim timp de 6 minute pana cand carnea devine lipicioasa.

Umplem fiecare chifla cu sos dulce – picant, carne, castraveti, ridichi si ceapa verde.

Servim Gua Bao cu multa pofta alaturi de legume, sos dulce – picant si sos de soia.

Daca v-a placut reteta de Gao Buns, va recomand sa incercati si un Asian Lunch, un Ficat de porc in stil chinezesc sau o portie de Noodles cu vita si mazare mangetout.

Gua Bao – Soft, fluffy Bao Buns, filled with tender sticky pork meat, and for those who want a lighter version, with turkey meat. Today we will learn how to prepare them at home, step by step. This is the kind of „street food” that you will miss and want to try again as soon as possible. But what exactly are these Bao Buns? Bao Buns are „steamed buns”, a warm, fluffy, slightly sweet treat that we fill with meat, sauces and Asian flavors.

To prepare the buns, mix warm water with milk, yeast, sugar and oil. Let the yeast activate for 10 minutes. Meanwhile, mix the flour, sugar, baking powder and salt in the bowl of a mixer. Then pour the liquid mixture over the dry ingredients and start mixing at low speed until you get a homogeneous dough. Knead for 3 minutes at medium speed until you get an elastic, not very soft dough that will not stick to your fingers or the mixing bowl.

Move the dough into a bowl and cover it with foil. Leave it in a warm place for about 2 hours. Turn the dough onto a board and spread it into a sheet about 0.6 cm thick. Cut the dough in the form of circles with a diameter of 9 – 10 cm.

Grease the buns with a small quantity of oil and fold them in half. Gently press the edges of the bun and place it on a baking paper. Cover with a towel and let it rest for another 30 minutes.

In the meantime, prepare a steamer and place the buns in it. Cover with a lid and cook for 10 – 12 minutes. Carefully open the lid so that the steam is released gradually. Serve Bao Buns with delicious meat filling.

To prepare the meat, put the meat in a cast iron pot and add all the ingredients needed to prepare the pork and turkey steak. Cover with a lid and cook on low heat for 2 hours until the meat becomes tender. Drain the meat and cut it into pieces.

Add a spoonful of oil to 2 pans and mix all the ingredients for the glaze in a small bowl. Heat the oil and add the pork and turkey to each pan. Fry over high heat until the meat starts to turn golden. Divide the mixture for the glaze into 2 equal parts and pour over the meat in each pan. Continue to cook for 6 minutes until the meat becomes sticky.

Fill each bun with sweet-spicy sauce, meat, cucumbers, radishes and green onions.

Serve Gua Bao with great appetite with vegetables, sweet-spicy sauce and soy sauce.
