Lemon Pie Cremsnit este una dintre cele mai reusite combinatii intre clasicul cremsnit si crema racoroasa de lamaie. Tuturor ne place cremsnitul traditional, insa acum ii dam o tenta aparte, atat prin servirea la pahar cat si prin aroma de lamaie si finetea cremei pe baza de mascarpone si smantana pentru frisca.
INGREDIENTE / INGREDIENTS
(pentru 6 portii / for 6 servings)
- 4 galbenusuri / 4 egg yolks
- 250 grame zahar / 250 grams sugar
- 1 praf de sare / 1 pinch of salt
- 50 grame amidon / 50 grams cornstarch
- 500 ml lapte / 500 ml milk
- 1 lingura esenta de vanilie / 1 tablespoon vanilla flavour
- 2 linguri coaja de lamaie / 2 tablespoons lemon zest
- 500 grame mascarpone / 500 grams mascarpone
- 200 ml smantana dulce / 200 ml double cream
- Sucul de la 1/2 lamaie / Juice from 1/2 lemon
- 1 foaie cremsnit (200 grame) / 1 puff pastry sheet (200 grams)
Intr-o craticioara amestecam galbenusurile cu zaharul, sarea, amidonul, coaja de lamaie si vanilia. Turnam deasupra laptele rece si amestecam. Punem la fiert si amestecam constant pana obtinem o crema consistenta. Acoperim crema cu o folie alimentara si lasam la rece cateva ore sau chiar de pe o zi pe alta.
Punem crema rece in vasul mixerului, amestecand timp de 1 minut. Adaugam mascarpone si smantana lichida si mixam timp de 1-2 minute pana obtinem o crema fina. La sfarsit incorporam sucul de lamaie.
Sfaramam foaia de cremsnit si o incorporam in crema de lamaie, pastrand cateva firmituri pentru decor.
Asezam crema in pahare si decoram cu foaia ramasa si frunze de menta.

Lemon Pie Cremeschnitte
Lemon Pie Cremsnit is one of the most successful combinations between the classic cremeschnitte and lemon cream. We all like the traditional cremeschnitte, but now we give it a special touch, by serving it in the glass and by the lemon flavor and the smoothness of the cream based on mascarpone and double cream.
In a saucepan, mix the egg yolks with sugar, salt, corn starch, lemon zest and vanilla. Pour the cold milk on top and mix. Bring to a boil and stir constantly until you get a consistent cream. Cover the cream with a food film and leave it in the cold for a few hours or even overnight.
Put the cold cream in the bowl of the mixer, mixing for 1 minute. Add mascarpone and double cream and mix for 1-2 minutes until you get a fine cream. At the end, add the lemon juice.
Crumble the pastry sheet and incorporate it into the lemon cream, keeping some crumbs for decoration.
Place the cream in glasses and decorate with the remaining sheet and mint leaves.
