Iata simplitatea unei salate vegane de fasole cu boabe rosii, legume crocante si un dressing genial de ierburi proaspete cu sos de lime aromat cu usturoi. Salata de fasole cu lime si menta este gata in efectiv 10 minute si poate reprezenta cu succes o cina individuala sau o garnitura usoara de vara.
INGREDIENTE / INGREDIENTS
(pentru 2 portii / for 2 servings)
- 250 grame fasole rosie conservata / 250 grams canned red beans
- 2 cepe rosii / 2 red onions
- 1 ardei iute / 1 hot pepper
- 2 cepe verzi / 2 scallions
- 2 castraveti / 2 cucumbers
- 2 catei de usturoi / 2 garlic cloves
- Sucul de la 1/2 lime / Juice from 1/2 lime
- 1 lingura ulei de masline / 1 tablespoon olive oil
- 3 linguri patrunjel verde tocat / 3 tablespoons grated parsley
- 2 linguri menta tocata / 2 tablespoons grated mint
- Sare / Salt
Metoda de prepare este super usoara. Desfacem conserva, scurgem si clatim fasolea cu apa rece.
Intr-un bol amestecam fasolea boabe, cu ceapa rosie taiata felii, castravetii cuburi si ardeiul si ceapa verde inele.
In bolul unui blender amestecam patrunjelul verde cu menta, usturoiul, sucul de lime, uleiul de masline si sarea. Mixam pana obtinem un sos de consistenta unui pesto.
Adaugam sosul de lime si menta peste legume. Amestecam si lasam la rece 1 – 2 ore inainte de servire.

Lime Mint Bean Salad
Look at the simplicity of a vegan bean salad with red beans, crunchy vegetables and a brilliant dressing of fresh herbs with lime sauce flavored with garlic. Bean salad with lime and mint is ready in 10 minutes and can successfully represent an individual dinner or a light summer side dish.
The preparation method is super easy. Open the can, drain and rinse the beans with cold water.
In a bowl, mix the beans, sliced red onion, diced cucumbers and hot pepper and green onion rings.
In the bowl of a blender, mix parsley with mint, garlic, lime juice, olive oil and salt. Mix until you get a pesto sauce. Add the lime and mint sauce over the vegetables.
Mix and leave in the cold for 1-2 hours before serving.
