La final de noiembrie, pe cand anul incepea sa se sfarseasca, am ajuns intr-o zi de sambata in Sibiu impreuna cu niste oameni dragi, nu pentru faimosul Targ de Craciun, asa cum ati fi tentati sa credeti, ci pentru ceva cumparaturi, nu de branza sau de virsli. Si daca tot ne-a prins pranzul in oras, am decis sa incercam unul dintre restaurantele cu recenzii bune. Am ales asadar Kombinat Gastro-Brewery si pentru ca am ramas datoare fata de mine si fata de acest loc simpatic din Sibiu, am decis sa va impartasesc cateva impresii la categoria: Unde mancam in … Sibiu.

Situat in inima vibrantului oras Sibiu, Kombinat Gastro-Brewery reuseste sa imbine perfect arta gastronomiei moderne cu pasiunea pentru bere. Acest loc nu este doar un restaurant – este o experienta, o incursiune in rafinamentul culinar si convivialitatea specifica Sibiului. De la designul industrial-chic care surprinde esenta modernitatii, pana la preparatele ingenioase ce imbina traditia cu inovatia, Kombinat devine rapid o destinatie preferata pentru gurmanzi si iubitori de bere.

In acest articol, vom explora ce face acest loc atat de special, de la meniul sau divers si unic, pana la atmosfera care te imbie sa revii. Asadar, haideti sa ne lasam purtati de aromele si povestile unui restaurant ce redefineste conceptul de „bucatarie urbana”.

Kombinat in Sibiu a primit recenzii excelente pentru mancarurile si serviciul lor. Restaurantul se dovedeste a fi o capodopera in materie de arta culinara, cu preparate atragatoare si pline de gust. Meniul se concentreaza pe experienta farm-to-table, folosind produse locale si de sezon. Preparatele si pozele sunt din sezonul de toamna, insa cateva s-au mai pastrat si in meniul de iarna.


Am ales sa impartim din sectiunea de deschidere: fragmente de toamna, balmos gatit cu cas si smantana, servit cu sos de burduf de la Sadu si pudra de galbiori, mousse din ficat de curcan servit cu spuma de mere cu tarhon, salata crocanta cu sfecla murata si boabe mariante de mustar si turta de casa cu maia si o crema de conopida – pe care am folosit-o ca sursa de inspiratie fix in reteta postata aici.




La felul principal am ales pastrav de munte – file de pastrav de la Sadu gatit in unt, piure de conopida, cu struguri murati si pastrama de oaie de la Gura Raului cu gogosari umpluti cu zacusca.



La desert ne-am rasfatat cu cel mai delicios orez cu lapte cu caramel sarat si spuma de mere cu tarhon pe care l-am incercat vreodata si care sper ca va reveni in meniu.

In afara de diversitatea meniului, cu accent pe optiuni vegetale si vegane, atmosfera confortabila care permite relaxarea te imbie sa reincerci experienta. De asemenea, personalul este apreciat pentru serviciul placut. In general, Kombinat se dovedeste a fi o alegere excelenta pentru o experienta culinara deosebita in inima Sibiului.

Atmosfera este primitoare si relaxanta, ideal pentru o iesire cu prietenii sau o cina in familie. De asemenea, berea artizanala este foarte apreciata, fiind un plus pentru cei care doresc sa incerce bauturi locale. Serviciul este, in general, prompt si prietenos. In ansamblu, Kombinat Gastro-Brewery este o destinatie populara in Sibiu pentru o experienta culinara placuta si nu numai.

At the end of November, as the year was drawing to a close, I arrived in Sibiu on a Saturday with some dear friends—not for the famous Christmas Market, as you might be tempted to think, but for some shopping, though not for cheese or sausages. And since we found ourselves in town at lunchtime, we decided to try one of the well-reviewed restaurants. Thus, we chose Kombinat Gastro-Brewery, and because I felt I owed it to myself and to this charming spot in Sibiu, I decided to share some impressions under the category: Where to Eat in… Sibiu.
Located in the heart of vibrant Sibiu, Kombinat Gastro-Brewery masterfully blends modern gastronomy with a passion for beer. This place is not just a restaurant—it’s an experience, an immersion into culinary refinement and the convivial spirit that defines Sibiu. From its industrial-chic design that captures the essence of modernity to its ingenious dishes that fuse tradition with innovation, Kombinat quickly becomes a favorite destination for food lovers and beer enthusiasts alike.

Kombinat in Sibiu has received excellent reviews for both its food and service. The restaurant proves to be a masterpiece of culinary art, offering visually appealing and flavorful dishes. The menu focuses on a farm-to-table experience, using local and seasonal ingredients. The dishes and photos are from the autumn season, but some items have remained on the winter menu.
From the starters section, we chose: fragments of autumn—balmoș cooked with cheese and sour cream, served with Sadu-aged cheese sauce and chanterelle powder; turkey liver mousse served with apple and tarragon foam; a crispy salad with pickled beets and marinated mustard seeds; and homemade sourdough flatbread with cauliflower cream—which I used as inspiration for a recipe shared here.
For the main course, we opted for mountain trout—trout fillet from Sadu cooked in butter, cauliflower purée, pickled grapes, and mutton pastrami from Gura Râului, served with stuffed bell peppers filled with zacusca.
For dessert, we indulged in the most delicious rice pudding with salted caramel and apple tarragon foam we’ve ever had, hoping it will make a return to the menu.
Beyond the diverse menu, with an emphasis on vegetarian and vegan options, the cozy atmosphere invites you to relax and revisit the experience. The staff is also praised for their pleasant service. Overall, Kombinat proves to be an excellent choice for a unique culinary experience in the heart of Sibiu.
The atmosphere is warm and relaxing, ideal for a night out with friends or a family dinner. Additionally, the craft beer selection is highly appreciated, making it a great spot for those wanting to try local beverages. The service is generally prompt and friendly. All in all, Kombinat Gastro-Brewery is a popular destination in Sibiu for an enjoyable culinary experience and more.
