Salata cu gnocchi, galbiori si piept de rata este o masa complexa cu arome deosebite. O combinatie inedita de piept de rata fraged, gnocchi fini, galbiori delicati si fructe proaspete scaldate intr-un dressing fructat, usor picant cu iz placut de zmeura. Serviti-o alaturi de un pahar de vin alb, rece pentru o cina exceptionala.

INGREDIENTE / INGREDIENTS

(pentru 2 portii / for 2 servings)

  • 250 grame gnocchi / 250 grams gnocchi
  • 200 grame galbiori conservati / 200 grams caned chanterelle
  • 100 grame branza Emmentaler / 100 grams Emmental cheese
  • 150 grame piept de rata sau de pui / 150 grams duck or chicken breast
  • 50 grame valeriana / 50 grams lamb lettuce
  • 50 grame afine / 50 grams blueberry
  • 50 grame coacaze / 50 grams redcurrants
  • 20 grame fulgi de migdale / 20 grams almond flakes
  • 1 lingura ulei de masline / 1 tablespoon olive oil
  • 100 grame sos de tomate / 100 grams tomato sauce
  • 50 grame zmeura / 50 grams raspberry
  • 2 linguri crema de otet balsamic / 2 tablespoons balsamic vinegar cream
  • 1/4 lingurita oregano / 1/4 teaspoon oregano
  • 1/4 lingurita fulgi de chilli / 1/4 teaspoon chilli flakes
  • Sare / Salt

Pentru dressing punem intr-o craticioara mica pasta de rosii, oregano, chilli si putina sare. Fierbem timp de 15 minute la foc mic si apoi dam deoparte. Lasam putin la racit si adaugam crema de otet balsamic si zmeura zdrobita cu o furculita. Amestecam si lasam sa se raceasca complet.

Pentru pregatirea pieptului de rata gasiti aici reteta si instructiunile de preparare. Daca nu sunteti fan piept de rata, puteti sa inlocuiti cu piept de pui. Taiati pieptul de pui fasii mici, le presarati cu sare si le trageti la tigaie cu foarte putin ulei de masline.

Intre timp fierbem gnocchi conform indicatiilor de pe ambalaj si ii lasam la racit. Scurgem si galbiorii de apa.

Pe 2 platouri aranjam frunzele de valeriana, branza Emmentaler taiata cubulete, galbiorii, gnocchi si pieptul de rata taiat felii sau fasiile de piept de pui.

Adaugam deasupra afinele, coacazele rosii si fulgii de migdale. Stropim cu ulei de masline si servim alaturi de dressingul cu zmeura.

Duck Breast, Gnocchi, and Chanterelle Salad

Salad with gnocchi, chanterelle and duck breast is a complex meal with special flavors. A unique combination of tender duck breast, fine gnocchi, delicate chanterelle and fresh fruit bathed in a fruity dressing with raspberry sauce. Serve it with a glass of cold white wine for an exceptional dinner.

For the dressing, put tomato paste, oregano, chilli and a pinch of salt in a small saucepan. Boil for 15 minutes on low heat and then set aside. Let it cool and add the balsamic vinegar cream and raspberries crushed with a fork. Mix and let it cool completely.

To prepare the duck breast, you can find the recipe and preparation instructions here. If you are not a fan of duck breast, you can replace it with chicken breast. Cut the chicken breast into small strips, sprinkle them with salt and fry them in a pan with a small quantity of olive oil.

Meanwhile, boil the gnocchi according to the instructions on the package and let them cool. Drain the caned chanterelle from water.

Arrange the lamb lettuce on 2 plates, diced Emmentaler cheese, chanterelle, gnocchi and sliced duck breast or chicken breast strips.

Add blueberries, red currants and almond flakes on top. Sprinkle with olive oil and serve alongside the raspberry dressing.
