Cred ca ciorba de salata verde si leurda este primul semn al primaverii culinare. Facem o tura prin piata si sigur suntem atrasi de verdeata de pe tarabe: salata verde frageda, leurda aromata, usturoi proaspat si cate si mai cate. Nu ma abtin si cumpar 2 salate verzi, o legatura mare de leurda, cateva oua proaspete si execut una dintre cele mai gustoase ciorbe.

  • 2 bucati salata verde / 2 lettuces
  • 1 legatura mare de leurda / 1 bunch wild garlic
  • 1 cana lapte batut / 1 cup buttermilk
  • 1 legatura usturoi verde / 1 bunch green garlic
  • 3 catei de usturoi / 3 garlic cloves
  • 4 linguri otet / 4 tablespoons vinegar
  • 5 oua / 5 eggs
  • 5 linguri ulei / 5 tablespoons oil
  • Sare / Salt
  • Smantana pentru servit / Sour cream for serving

Spalam salata si leurda si le rupem in bucati marisoare. Intre timp, punem la fiert 2 litri de apa. Cand apa fierbe adaugam salata verde si leurda si le fierbem timp de 10 minute.

Intr-un bol amestecam laptele batut, o lingurita de sare, otetul, usturoiul verde taiat marunt si cateii de usturoi striviti. Adaugam amestecul peste salata si mai lasam la fiert 10 minute.

In paralel, incingem uleiul si pregatim o omleta din 5 oua. Taiem omleta in bucati mari si o rasturnam in oala cu ciorba, impreuna cu uleiul in care am prajit-o. Mai lasam pe foc timp de 5 minute si stingem focul.

Daca v-a placut reteta de ciorba de salata verde cu leurda, va invit sa incercati si ciorba clasica de salata sau un bors de primavara cu loboda si multe verdeturi.

Lettuce and Wild Garlic Soup

I think lettuce and wild garlic soup is the first sign of culinary spring. We walk around the market and we are attract by the green vegetables: tender lettuce, flavored wild garlic, fresh garlic and more and more. I do not hesitate and buy 2 green salads, a large bunch of wild garlic, some fresh eggs and make one of the tastiest soups.

Wash the salad and wild garlic and cut them into small pieces. Meanwhile, boil 2 liters of water. When the water boils, add the lettuce and wild garlic and cook for 10 minutes.

In a bowl, mix the whipped milk, 1 teaspoon of salt, vinegar, chopped green garlic and crushed garlic cloves. Add the mixture over the salad and cook for another 10 minutes.

In parallel, heat the oil and fry an omelet from 5 eggs. Cut the omelet into large pieces and pour it with the oil into the soup pot. Let it cook for another 5 minutes and turn off the heat.

Serve the salad soup with sour cream and lots of appetite.
