Cu ce ne mai incalzim iarna? Desigur cu o ciorbita fierbine si gustoasa. Sa fie de cartofi cu afumatura, dreasa cu smantana si aromata cu tarhon.
A fost prima data cand am incercat ciorba cu afumatura dreasa cu smantana si a fost un succes total.
INGREDIENTE / INGREDIENTS:
(pentru 6 portii / for 6 servings)
- 500 grame ciolan afumat dezosat / 500 grams smoked pork hock boneless
- 1 morcov / 1 carrot
- 1 patrunjel mic / 1 small parsley root
- 1 ceapa / 1 onion
- 1 felie telina / 1 slice celery
- 6 cartofi / 6 potatoes
- 200 grame smantana / 200 grams sour cream
- 2 galbenusuri / 2 egg yolks
- 3 linguri otet de mere Cerbul Acru / 3 tablespoons apple vinegar
- 1 lingurita tarhon taiat fin / 1 teaspoon fine chopped tarragon
- Sare / Salt
Ideal ar fi sa alegem un ciolan produs de catre o ferma locala. Taiem carnea in cubulete de aproximativ 3 x 3 cm si o punem la fiert intr-o oala sub presiune timp de 30 de minute. Dupa ce carnea este fiarta, adaugam ceapa, morcovul, patrunjelul si telina taiate marunt si sare dupa gust. Lasam sa fiarba la foc mic timp de 30 de minute si adaugam cartofii taiati cubulete. Mai lasam 20 minute la fiert si adaugam otetul. Intr-un bol amestecam galbenusurile cu smantana si adaugam pe rand 3 polonice de ciorba. Turnam acest amestec in oala, adaugam tarhonul si mai lasam pe foc 2-3 minute.
Servim cu ardei iuti murati si evident cu multa pofta!

Smoked Meat Potato Soup
How do we warm up in winter? Of course with a hot and tasty soup. Let it be: smoked meat and potatoes with sour cream and flavored with tarragon.
Ideally, should choose a hock produced by a local farm. Cut the meat into cubes of about 3 x 3 cm and boil it in a pressure cooker for 30 minutes. After the meat is cooked, add the onion, carrot, parsley and celery, finely chopped and salt to taste. Let it simmer for 30 minutes and add the diced potatoes. Let it boil for another 20 minutes and add the vinegar. In a bowl, mix the yolks with the sour cream and add 3 big tablespoons of soup in a row. Pour this mixture into the pot, add the tarragon and leave it on the fire for another 2-3 minutes.
Serve with hot peppers and obviously with a lot of appetite!
